- Old-fashioned oats (oatmeal)
- Almond flour
- Coconut sugar
- Baking powder
- Pumpkin spice or pumpkin pie spice
- Salt
- Freshly grated nutmeg
Wet Ingredients:
- Pumpkin puree (Homemade or can)
- Melted butter
- Bananas; mashed
- Greek honey vanilla yogurt
- Eggs
- Milk
- Vanilla extract
Optional:
- Monk fruit powdered sugar or regular powdered sugar
- Milk or melted butter (I used milk)
How to Make Pumpkin Baked Oat in the Oven (Step-by-Step):
Follow these quick and easy steps to make your own pumpkin baked oatmeal in the oven for a soothing and satiating breakfast!
- Preheat the Oven
Preheat oven to 350F.
- Combine Dry Ingredients
Next, grab a big bowl and add all the dry ingredients. Stir to combine.
- Prep Wet Ingredients
In another bowl, mash your bananas. Then, add the rest of the wet ingredients to the bowl of mashed bananas and mix them together.
- Combine Wet and Dry Ingredients
Next, you’ll combine the wet and dry ingredients by adding the dry ingredients to the wet ingredients bowl. Make sure everything is well combined.
- Bake
Your oven should be ready by now (preheated to 350F). Take this mixture and pour it into a greased baking dish. Put the baking dish into the oven and bake for 30 minutes or until fully cooked but not overcooked so that it becomes dry/rubbery.
- Serve and Enjoy!
After baking, allow at least 5-10 minutes before serving. Use a bread knife to cut your pumpkin baked oats into squares so they are easy to serve! Then, you combine 1/4 cup of Monk fruit powdered sugar and 2 tablespoons of milk to make a small glaze. Sprinkle the glaze, grab a square, and enjoy! Alternatively, you can sprinkle maple syrup instead of the simple glaze.

- You can swap milk with heavy cream or half and half.
- The baking dish you have is glass or ceramic. I like using this one from Pioneer Woman.
- Do not overcook these baked oats! They should somewhat resemble the texture of a brownie or cake, but they shouldn’t be dry or rubbery. Check them at 25 minutes and allow them to bake for up to 30 minutes if need be.
- These are even better with a drizzle of maple syrup or glaze just prior to serving.
