How to Make Vegan Banana Oat Granola Clusters (Step-by-Step):
I’m telling you, once you make these vegan banana oat granola clusters, you will make them again and again! They are a favorite in my house, and I hope they’ll become a favorite for you too.
- Mash the banana
For your best results, you’ll want to use an overripe banana. You can use a fork to mash it up with ease in a bowl.
- Add the oats
Once your banana is mashed up, measure and pour in 1 ½ cups of rolled or quick oats. Stir to combine the banana and oats well.
- Add some flavor
Now comes the fun part! Add a dash of cinnamon, a little salt, and a tablespoon of maple syrup and almond butter. You can substitute maple syrup for date syrup or monkfruit. And almond butter for peanut butter.
- Make the banana oat dough
Once you have all these ingredients together, you’ll mix them up until they form a nice, thick dough. This is not a smooth dough.
- Put it in the air fryer
Place parchment on the bottom of your air fryer, and then you can drop the dough into little balls and clumps, spreading it out in the air fryer.
- Get Air Frying
Once you’ve added the dough, cook the granola clusters at 275F for 15 to 20 minutes. Shake/toss midway. Check it at 15 minutes to see how it’s crisping up. You can cook it until it gets to your level of desired crispness.
- Let it cool
