The Suya Wings I Couldn’t Forget in Abuja

Truth be told, chicken wings suya was not my genius original idea. When I went to 9ja in March, one of the first events I attended was a beautiful birthday celebration hosted by a friend of my childhood friend. And guess what was served as one of the appetizers? The most delectable Nigerian chicken wings suya! Also, the environment was topnotch!

Throughout the rest of my stay, I kept wanting more. I simply could not get those wings out of my head. So, when I returned to the States, I knew I had to recreate them for my family. I was convinced they would love them. And yes, they absolutely did!

These wings are generously seasoned with authentic yaji, also known as suya pepper, and then cooked in the air fryer until juicy inside and beautifully crisp outside. Next, I brush them with even more yaji mixed with extra virgin olive oil as they cook. After all, when it comes to suya, we are not being shy with the seasoning!

Even better, these Nigerian suya chicken wings are incredibly versatile. For instance, you can serve them the Nigerian way with freshly sliced onions and tomatoes. Alternatively, make them an appetizer for a gathering or serve them as part of Sunday dinner with jollof rice, white rice, beans and stew, or even egusi soup.

Meanwhile, my kiddos have another idea entirely. On lighter-meal days, they debone the suya chicken wings and add the meat to tortilla wraps with other fresh ingredients. Either way, these wings never go to waste in our house. YUM!

What Is Nigerian Chicken Suya?

Suya is a popular Nigerian street food. It is typically made by coating thinly sliced meat with yaji, then grilling it over an open flame. Yaji, often called suya pepper or suya spice, typically combines ground peanuts with warm, savory spices. The exact blend may vary depending on who makes it. A Note About the Suya Pepper

Your yaji or suya pepper is the star of this recipe. Prioritize using a good-quality, authentic blend. Different suya spice blends can vary considerably in heat, saltiness, and flavor. Taste and adjust as needed, especially if your yaji already contains salt or seasoning. I also prefer no-sodium yaji, which helps me control how much salt I add. Though I got my yogi from Nigeria. You can also buy it from African stores or Amazon.

Recipe Tips for the Best Air Fryer Suya Wings

  1. Use authentic yaji. This is where most of your signature suya flavor comes from, so the quality matters.
  2. Dry those wings! Patting the chicken thoroughly dry helps create a better exterior in the
    air fryer.
  3. Don’t overcrowd your air fryer. Cook in batches so hot air can circulate properly.
  4. Reserve some yaji for brushing. Mixing suya seasoning with olive oil and brushing it onto the wings adds another layer of flavor.
  5. Flip halfway through. This encourages more even browning and gives you another opportunity to brush on that delicious suya mixture.
  6. Watch the salt. Yaji and bouillon can already contain sodium, so adjust the added salt according to your particularproducts.

Substitutions and Variations for Nigerian Suya Chicken Wings

This recipe is easy to customize depending on the chicken you have available, your preferred spice level, or how much you want to make.

Use Chicken Drumsticks

Swap the wings for chicken drumsticks and season them with the same yaji mixture. Adjust the air-frying time as needed since drumsticks may take longer to cook.

Try Boneless Chicken

Boneless chicken thighs or chicken breasts also work well with these suya flavors. Cut the chicken into smaller pieces and reduce the cooking time accordingly.

Make Your Suya Wings Spicier

If you love your suya HOT, use a spicier yaji blend or add a little cayenne pepper. Remember that yaji blends vary in heat, so taste yours before adding extra pepper.

Make a Smaller Batch

Four pounds of chicken wings makes a generous batch, so feel free to halve the recipe. Simply reduce the chicken and seasonings proportionately while following the same cooking method.
