Roasted potatoes are perfect for the holidays, and the amazing flavors of garlic and rosemary make this dish incredibly flavorful and inviting! These air fryer roasted potatoes with rosemary and garlic are vegan, gluten-free, and super tasty. Add any main dish of choice to make this a complete meal.

The rosemary and garlic are flavorful and make these air-fried potato cubes a savory side dish that your whole family will love. I cut the potatoes in cubes for no particular reason, so feel free to cut them into any shape you desire. On the other hand, these cubes remind me of my sweet potato cubes, lol, if you are a potato person like me (blink blink), you should definitely check it out!

Which Potatoes Work Best for This Air Fryer Recipe?
Pretty much any potato will work well for air fryer roasted potatoes. Russets get nice and crisp with a soft and fluffy interior. Yellow or Yukon Gold potatoes get crispy outside with more of a creamy interior. Reds will be similar with that crispiness and a soft, creamy texture inside. I think any potato will work just fine in the air fryer! 🙂

Ingredients for Vegan Roasted Potatoes in the Air Fryer:
- Medium-sized potatoes
- Garlic cloves
- Olive oil
- Dry rosemary leaves (fresh rosemary works too)
- Onion powder
- Garlic powder
- Salt
- Black pepper
- Fresh cilantro or parsley for garnishing (optional)

How to Make the Best Air Fryer Roasted Potatoes (Step-by-Step)
Air fryer roasted potatoes are so simple and reward you with the best flavors. Here’s how to make them so you can get them on the table with dinner tonight!
- Wash
You’ll start by washing your potatoes off. This is especially important if you want to keep the skins on. Be sure to pat your potatoes completely dry with paper towels.
- Peel and Cut the Potatoes
Depending on the kind of potatoes you have, you may want to peel them. I’d recommend peeling with Russets but other potatoes are fine with the skins on if you like them that way. There’s a ton of nutrition in those potato skins. Peel or don’t peel, but cut them up into cubes. You’ll also want to chop your garlic.
- Season
Now you’ll want to put your potato cubes in a bowl and add the chopped garlic, spices, and oil, stirring well to coat with a spatula. Taste the seasonings and feel free to adjust them according to your preferences.
- Place Seasoned Potatoes in the Air Fryer
Place the seasoned potatoes in the air fryer. Spread them out and lay them on a single layer if possible. This helps with even cooking.
- Air Fry the Seasoned Potatoes aka Cook
Preheat your air fryer at 375F, then add your seasoned potatoes and air fry for 15 to 20 minutes. They are ready when they are fork tender and have crispy edges. You’ll want to shake and toss them halfway through the cooking time for even cooking!
- Garnish and Enjoy!
When your air fryer roasted potatoes are done, garnish them with fresh chopped cilantro or parsley. A pop of green always makes them look pretty! Then, enjoy!!!
Notes/Tips for Crispy Roasted Potato Cubes:
- If you leave the skins on, scrub them well!
- Don’t skip the preheat step. This will enhance the crispiness of your potato cubes.
- Make sure you shake and stir the potatoes halfway through the cooking time so all of them get crispy.
- Keep your cubes even. When they are all the same size, they will all cook properly.
- You can sub olive oil with butter if don’t care about this recipe being vegan.
How to Store Air-Fried Roasted Potatoes Leftovers:
If you have any of these air-fried roasted potatoes leftover, you can keep them in your fridge for a maximum of 5 days. You can also seal them in an airtight container or plastic bag to put in your freezer for about 6 months.

Air Fryer Roasted Potatoes FAQs
After you wash your potatoes (and peel them if you want them without skins), take a sharp knife and cut your potatoes lengthwise into slices. Then take those slices and cut them again lengthwise into the width. Turn the potato and make the final cuts of the same width in the opposite direction, and you will have uniform cubes of potatoes.
While you do not have to soak potatoes in water prior to this recipe, you certainly can. It sounds strange, but soaking them draws out some of the natural starch, which can make them even crispier. You can still follow this recipe for perfectly crispy potato cubes without soaking them, though.
Known as blanching, if you boil your potatoes for about 4 minutes before air frying, you’ll have the same result as soaking them. Again, you don’t have to do this before following my recipe to get crispy cubes.
Yes, air-fried potatoes are a healthier way to eat potatoes when you want something fried. They come out with the perfect crispiness just like a restaurant only, without all that excess oil.

Variations/Substitutions:
Using the techniques in my recipe, you can season your air fryer roasted potatoes in so many ways to shake things up. Think Cajun, a perfect pairing for a fish dish!
