Storage Tips

You don’t have to refrigerate pumpkin bread, but before you wrap it up, make sure it has completely cooled. You’ll want to wrap it tightly and keep it in a cool, dry place. It will last up to 4 days this way…if you have any leftovers, that is!

If you make a bounty of it and want to freeze it, that’s a great idea too. You’ll always have it ready for guests that drop by during the holidays. Wrap it well, and you can keep it in the freezer for up to 3 months.

Recipe Notes/Tips for Making Healthy Pumpkin Bread

  • I chose coconut sugar instead of brown sugar to keep this healthier, but you can use brown sugar if that’s what you have.
  • If you don’t have time to make fresh homemade pumpkin puree yourself, you can use the canned pumpkin. However, DO NOT use pumpkin pie filling. That stuff is seasoned and will alter the taste.
  • Make sure you bake this pumpkin bread thoroughly. Check with the toothpicks to make sure it has completely cooked through.
  • If you want to sub out the coconut sugar, do not use any liquid sweeteners like honey or maple syrup because it will affect the outcome. I suggest brown sugar instead!
