- Boneless chicken thighs
- Yellow bell pepper
- Red bell pepper

- Knorr bouillon powder
- Creole seasoning (I used Tony Chachere’s)
- Onion powder
- Salt
- Dry thyme
- Black pepper
- Parsley leaves (optional for garnishing)
How to Make Chicken Zucchini Stir Fry in the Air Fryer (Step by Step):

- Prepare the Vegetables and the Chicken
The first step is to gather all your ingredients. Then you will wash and cut the zucchini, bell peppers, and onions. Next, you’ll want to clean the boneless chicken thighs and cut them. I like to keep the chicken pieces and the zucchini pieces around the same size, so everything cooks evenly.
- Place in a large bowl
Add all the ingredients (chicken, zucchini, bell peppers, and onions) to a big bowl.
- Season the Zucchini and Chicken
Generously sprinkle the seasoning spices and herbs on the ingredients and use a clean hand or spatula to combine. Ensure to mix well.
- Air Fry Chicken and Zucchini
Now comes the fun part! Place the seasoned chicken and zucchini into the air fryer basket. Set it to 400F for 10 minutes; you don’t have to preheat the air fryer, but you can if you like. (Sidebar: I did not preheat the air fryer).
- Check halfway
Check halfway through the cooking time with a meat thermometer to ensure the chicken is fully cooked, and add more time if necessary. Then serve! Tip: Cook in batches to avoid overcrowding your air fryer basket; I cooked this recipe in two batches.

No worries about questioning. Now that you said that, I might have to recalculate it, lol. However, this was a huge meal, the plate you see is one serving; I mention under the “Tips” that I cooked this recipe in two batches. I made two plates of the photo. Also, because I made it two in 2 sets, we gobbled down the first batch before the second batch was ready. You can get away with getting three servings out of this recipe, especially if you wish to serve it with rice.

I would just love to say this is one of the very first recipes I made in my airfryer, and by far, is the most popular. I make this at least twice a month.
Sometimes with rice or Quinoa. Sometimes I throw in extra veggies and omit the starch altogether.
Which ever way I make it… the family gobbles it up every time.

Great question, Joyce. Remember, if you have a bigger air fryer, you could be able to make it at once. My air fryer is 6-quart. I think you should be fine if you keep it warm in the oven while cooking the rest. I typically cover with foil and cook the rest. Also, this recipe cooks super quick.
