On those chilly fall and winter mornings, there’s nothing like a cozy yet easy-peasy breakfast that takes little effort. I like to call it a lazy breakfast because I hardly have to lift a finger, except when it comes to raising my fork up to my mouth to take a bite. Introducing my make-ahead breakfast pumpkin baked oatmeal recipe that is as healthy as it is delicious! This recipe is nutritious, loaded with pumpkin puree, oats, almond flour, etc. The best thing about this breakfast pumpkin baked oatmeal is that it is easy to make and hand-free!
Ingredients
Dry Ingredients
- 3½ cups old-fashioned oats (oatmeal)
- 1 cup almond flour
- 3/4 coconut sugar
- 4 teaspoons baking powder
- 1 tablespoon pumpkin spice
- 3/4 teaspoon salt
- ½ teaspoon freshly grated nutmeg

Wet ingredients:
- 1 cup pumpkin puree
- 5 tablespoons of melted butter
- 2 ripe bananas; mashed
- 1 cup Greek Honey vanilla yogurt
- 3 eggs
- 2 cups milk (less than 2 tablespoons)
- 1 teaspoon Vanilla

Optional:
- ¼ cup Monk Fruit Powdered sugar or regular powdered sugar
- 2 Tablespoons Milk or melted butter
Instructions
- Preheat the Oven. It all begins with getting your oven preheated to 350F.
- Combine Dry Ingredients. Next, grab a big bowl and add all the dry ingredients. Stir to combine.

- Prep Wet Ingredients. In another bowl, mash your bananas. Then, add the rest of the wet ingredients to the bowl of mashed bananas and mix them together.

- Combine Wet and Dry Ingredients. Next, you’ll combine the wet and dry ingredients by adding the dry ingredients to the wet ingredients bowl. Make sure everything is well combined.

- Bake. Your oven should be ready by now (preheated to 350F). Take this mixture and pour it into a greased baking dish. Put the baking dish into the oven and bake for 30 minutes or until fully cooked but not overcooked so that it becomes dry/rubbery.

- Serve and Enjoy! After baking, allow at least 5-10 minutes before serving. Use a bread knife to cut your pumpkin baked oats into squares so they are easy to serve! Then, you combine 1/4 cup of Monk fruit powdered sugar and 2 tablespoons of milk to make a small glaze. Sprinkle the glaze, grab a square, and enjoy! Alternatively, you can sprinkle maple syrup instead of the simple glaze.

Notes
You can swap milk with heavy cream or half and half.
The baking dish you have is glass or ceramic. I used a Pioneer Woman baking dish.
Do not overcook these baked oats! They should somewhat resemble the texture of a brownie or cake, but they shouldn’t be dry or rubbery. Check them at 25 minutes and allow them to bake for up to 30 minutes if need be.
These are even better with a drizzle of maple syrup or glaze just prior to serving. If using maple syrup make sure it’s original. It should only have one ingredient – Maple Syrup!
