I used monkfruit, but you can obviously use sugar or any other sweetener of choice!  And when it is all done cooking, drizzle a little balsamic reduction for that rich balsamic color and flavor.

Why I challenged Myself to make a Perfect Broccoli in the Air Fryer.

First of all, broccoli is my son’s favorite vegetable, and I make them weekly as that is one vegetable I know everyone in the family will love! Usually, I steam my broccoli, after which I will then sauté it. This gives it a crunchy yet tender texture; I also use a bunch of pantry herbs and spices to elevate the taste.

With this in mind, I was very skeptical initially about cooking my fresh, beautiful broccoli in the air fryer. First, I didn’t want them to dry up. Second, I don’t want completely charred broccoli florets. In that case, my challenge became how to make this air fryer roasted broccoli crunchy, tender, tasty, and not completely charred! This led me to use a wet marinade comprising olive oil and balsamic vinegar. Also, monkfruit to sweeten it, onion powder, garlic powder, dry thyme, etc.

HOW TO MAKE VERY TASTY AIR FRYER ROASTED BROCCOLI (STEP BY STEP)

STEP ONE: Wash and cut; wash broccoli very well and dry with paper towels. Then cut in bite sizes. Don’t cut them too small or too big. I include the softer part of the stem and those that are holding the florets. I like how crunchy they become after cooking.

STEP TWO: Season; place the cut broccoli in a big bowl and add onion powder, salt, black pepper, Maggi, and dry thyme. Use a spatula to combine or toss. Then add the avocado oil to the balsamic vinegar and add the monkfruit. Use a spoon to mix these three ingredients, and then pour on the broccoli. Combine everything with a spatula; taste the raw broccoli and adjust the flavors. Set aside to marinate for 5 – 10 or air fry immediately. Personally, I prefer to allow a little time for the broccoli to soak up all the marinade. 

Season; place the cut broccoli in a big bowl and add onion powder, salt, black pepper, Maggi, and dry thyme. Use a spatula to combine or toss. Then add the olive oil to the balsamic vinegar and add the monkfruit. Use a spoon to mix these three ingredients, and then pour on the broccoli. Combine everything with a spatula

STEP THREE: Air fry, preheat the air fryer at 350. When it is time to add the broccoli, remove the air fryer basket and place a piece of parchment inside the air fryer basket, then pour the seasoned broccoli put the basket back into the air fry to cook. After the first 5 minutes, remove the parchment paper, stir or shake and then air fry for another 3 minutes! Make sure to keep your eyes on this so you are not left with almost charred broccoli. 

STEP THREE: Air fry, preheat the air fryer at 350. When it is time to add the broccoli, remove the air fryer basket and place a piece of parchment inside the air fryer basket, then pour the seasoned broccoli put the basket back into the air fry to cook. After the first 5 minutes, remove the parchment paper, stir or shake and then air fry for another 3 minutes! Make sure to keep your eyes on this so you are not left with charred broccoli.

STEP FOUR: Serve and enjoy; air fryer roasted broccoli are perfect sides during the holidays or Sunday dinners. They are equally fantastic for meal prep; I make plenty on Sunday for use throughout the week! You can serve them alongside a leg of lamb, turkey breast, air fryer chicken thighs, or air fried salmon fillets. You can also eat it by itself. I am guilty of almost finishing these babies before they get to the table.😭

  • Try to cut the broccolis equal; this helps them to cook evenly. Similarly, cut them into bite-size pieces. I remember one time I had steamed broccoli in the restaurant, and it was big. I had to cut it in other to eat it. 
  • Dry the broccoli with paper towels after washing. Uniquely, this air fryer roasted broccoli calls for a wet marinade, so it’s essential to dry off excess water from washing it thoroughly. This way, the marinade is not diluted.
  • Do not overcook the broccoli unless you are fine with burnt broccoli florets. Unfortunately (or, rather, fortunately, we do not like overcooked broccoli here. My kids wouldn’t eat them if they are charred)! If you indeed cut your broccoli thinner than mine, you shouldn’t cook them for up to 8 minutes. You will be pushing if you do. The best bet is that you keep your eyes on them; if they are cooked to your doneness, remove them asap!

  • 2 medium – larger heads of fresh broccoli (as per mine, one was bigger than the other); or about 56 cups of fresh broccoli; chopped
  • 1 tablespoon avocado oil (or olive oil)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon monkfruit (or any other sweetener of choice)
  • 1 teaspoon onion powder
  • ¼ teaspoon dry thyme
  • ½¾ teaspoon Maggi (or Knorr of equal amount)
  • ¼ teaspoon salt
