I originally planned to shop exclusively at ALDI for this healthy Thanksgiving menu, but a few items weren’t available at my local store. To stay within budget and still complete the full menu, I picked up the remaining ingredients at Walmart. Both stores offer great prices on seasonal produce and pantry staples, so combining them made it easy to keep the entire Thanksgiving dinner under $85.

Instructions:

Rub the turkey breast generously with herb butter (or olive oil) made by combining fresh rosemary, thyme, garlic, and lemon zest. Then roast until golden and juicy. Let it rest before slicing to keep the meat tender and flavorful. This recipe delivers classic holiday flavor with much less fuss than a whole bird. Note: I made some gravy from the turkey drippings to go with the turkey breast. Though optional, I highly recommend.

  • 2 medium acorn squash, halved and seeds removed
  • 1 tablespoon maple syrup 
  • Olive oil spray or avocado oil spray
  • Salt and black pepper, to taste

For The Quinoa Filling

  • 2-3 cups cooked quinoa or 1 (tipping) cup uncooked quinoa
  • 1 tablespoon olive oil
  • 1 small or medium onion, finely chopped
  • 1 medium-sized apple (I used Honey Crisp)
  • 1 big red bell pepper
  • 2 cloves garlic, minced
  • ½ cup dried cranberries 
  • 1/3 cup chopped walnuts
  • 1 teaspoon house spice mix (dash of dried thyme, salt, pepper, and Knorr Bouillon powder), to taste

Instructions:

Roast the acorn squash halves until tender and caramelized, then prepare the quinoa and sauté a flavorful mix of onions, peppers, apples, walnuts, spinach, and cranberries. Combine the quinoa with the sautéed filling, adjust the seasoning, and spoon the mixture generously into the roasted squash. Bake briefly to warm through and allow the flavors to meld.
