INGREDIENTS FOR WALNUT BLUE CHEESE SALAD

Bleu Cheese or Blue Cheese

Blue Cheese is one of the main ingredients for this walnut blue cheese salad. You can obviously swap/sub it with any other cheese of choice, such as goat cheese or feta. Blue cheese or bleu cheese is a type of cheese made using cultures of Penicillium, a kind of mold. It is important to realize that blue cheese comes in different colors of blue and green. They are salty and sharp with a distinct taste. I like crumbling some blue cheese on salads such as this one. Blue cheese is an excellent source of calcium and protein. There are five kinds of blue cheese.

Five Types of Blue Cheese:

  1. Danish Blue cheese or Danablu is a soft and creamy blue cheese. This blue cheese originated from Denmark! To point out, this type of blue cheese is made from full-fat cow milk and homogenized cream.
  2. Gorgonzola (originated from Italy and takes its name “Gorgonzola,” from the name of the village where it was first made,
  3. Cabrales 
  4. Stilton blue cheese (made from pasteurized milk)
  5. Roquefort blue cheese (originated from France)

Walnuts:

First of all, walnuts are healthy fat! Second, walnuts add amazing crunch to a salad bowl. Third, walnuts are very nutritious and packed with tons of health benefits! “A walnut is the nut of any tree of the genus Juglans (family Juglandaceae).”This wrinkly nut makes a great snack or “meat,” and this walnut blue cheese salad will not be the same without them! Aside from giving this salad the needed crunch, it equally benefits the body a great deal!

Salad greens:

Whenever I make this salad, I typically use triple-washed salad greens. Fortunately, any salad green you have on hand will do! Today, I am using spring mix (half and half)! Similarly, I have equally use kale, lettuce, and arugula! When it comes to salad leaves, my easy rule is to use what I know, like, and enjoy!

On the positive side, the dressing for this walnut blue cheese salad is easy peasy. All you need is 1 tablespoon of balsamic reduction, and be prepared to be wowed! To make the balsamic reduction, grab a high-quality balsamic vinegar and follow my instructions here. When it thickens, it is ready! Here’s how I made mine!

  • Place the greens into a clean bowl. If using greens from Farmers Market, ensure to wash and dry off the moisture before using. 
  • Sprinkle some crumbled blue cheese on the salad greens.
  • Add the walnuts. If possible, break the walnuts instead of leaving them whole!
  • Finally, drizzle a tablespoon of balsamic reduction aka, balsamic glaze.

Ingredients

Scale

¼ cup of blue cheese 

¼ cup walnut (toast if you so wish)

3 cups (or more) of salad greens (I used half and half; a half of spring mix and spinach)

1 tablespoon of balsamic reduction (or any salad dressing of choice)


Instructions

  1. Place the greens into a clean bowl. If using greens from Farmers Market, ensure to wash and dry off the moisture before using. 
  2. Sprinkle some crumbled blue cheese on the salad greens.
  3. Add the walnuts. If possible, break the walnuts instead of leaving them whole!
  4. Finally, drizzle a tablespoon of balsamic reduction (balsamic glaze).

Notes

Make sure to wash and dry your greens properly before using if they don’t come already washed!

Feel free to trim or cut the salad leaves; I intentionally left them whole, but you don’t have to!

Add other things to this salad to make it more filling. Bake sweet potatoes, avocado, meat, or fish are a few to consider!
