Today, I’m sharing my kids’ favorite recipe—apple crumble muffins. They have a spectacular oat crunchy streusel on top and are full of fresh apples. While they love the taste, I love that I can give them something super nutritious to start their day. You can kick start yours with these crumble muffins as well. It’s super easy to make; you will need fresh apples, flour, oats, coconut sugar, eggs, cinnamon, nutmeg, etc. And you will end up with the most delicious breakfast muffins. This is one way to use up those apples! Remember an apple a day keeps the doctor away!
Aside from adding apples to my cabbage carrot apple slaw, this is one of the ways I can get my kids to eat fresh apples (without complains)! These apple muffins taste so sweet, like a treat. But unlike those bakery muffins, they aren’t loaded with sugar because I used coconut sugar instead.

Yes, you can use frozen apples if that’s what you have on hand. Fresh apples are the best, in my experience. But if you have a frozen bounty of apples and are looking for ways to use them, you can make healthy apple muffins.

Here is what you need to make healthy and tasty apple crumble muffins!
Dry Ingredients:
All-purpose flour, Wheat flour, Almond flour, and Coconut sugar. Baking powder, Cinnamon, Nutmeg, and Salt. (I typically mix the coconut sugar with the wet ingredients.)
Wet Ingredients:
Fresh apples, Eggs, Milk, and Vanilla extract. Plant butter (I used Country Crock plant butter, but regular butter works just fine).
For the Streusel:
Quick oats, flour, Plant butter, Coconut sugar, Cinnamon, Salt and Nutmeg.
How to Make Apple Crumble Muffins with Oat Streusel (Step-by-Step):
Make these apple crumble muffins with crunchy oat streusel now and serve them for breakfast all week. Here’s how!
- Prep the Apples
Start by peeling 2 apples and dicing them into tiny little bits. You’ll then squeeze the juice of half a lemon onto the diced apples, mixing it well to keep them from browning.
- Preheat the Oven
After dicing your apples and coating them with lemon juice, preheat your oven to 375F.
- Mix the Wet Ingredients
Add your room-temperature eggs, plant butter, and coconut sugar to another bowl. Use your hand mixer to cream these ingredients together, then add the milk and vanilla extract and finish creaming.
- Add in the Dry Ingredients
Now, you’ll add the dry ingredients to the same bowl. Pour in the all-purpose flour, whole wheat flour, almond flour, baking powder, salt, cinnamon, and nutmeg. Combine everything with your hand mixer, taking care not to over-mix.
- Fold in the Apples
After mixing your muffin batter, add the diced apples. Use a spatula to combine. Set the batter aside.
- Make the Streusel Topping
You’ll grab another bowl and add the streusel ingredients to it – flour, quick oats, coconut sugar, salt, and room-temperature plant butter. You can then combine them with a fork or your clean hands. The result should be coarse and crumbly.
- Prepare to Bake Your Muffins
You can grease the muffin tins with melted plant butter or oil, use muffin liners, or both. Then, fill the muffin tins and lightly top with oat streusel.
- Bake the Muffins
Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the muffins comes out clean. Enjoy warm.

- I used Country Crock plant butter, but you can use any brand. It should be at room temperature until almost melted when you prepare the muffin batter.
- Use a 1/4 cup ice cream scoop to fill the muffin tins. This will help you add the right amount and keep them uniform in size.
- I baked mine for exactly 29 minutes. The size of the muffin tins may affect your baking time, so be sure to keep an eye on them. With my muffin tins, this recipe made about 18 medium-sized muffins.
- Make to grease your muffin tins.
