Walnut blue cheese salad is a refreshingly light salad that is salty, sweet, and satisfying! Feel free to add your choice of protein for an enjoyable and comforting meal!


Ingredients

Scale

¼ cup of blue cheese 

¼ cup walnut (toast if you so wish)

3 cups (or more) of salad greens (I used half and half; a half of spring mix and spinach)

1 tablespoon of balsamic reduction (or any salad dressing of choice)


Instructions

  1. Place the greens into a clean bowl. If using greens from Farmers Market, ensure to wash and dry off the moisture before using. 
  2. Sprinkle some crumbled blue cheese on the salad greens.
  3. Add the walnuts. If possible, break the walnuts instead of leaving them whole!
  4. Finally, drizzle a tablespoon of balsamic reduction (balsamic glaze).

Notes

Make sure to wash and dry your greens properly before using if they don’t come already washed!

Feel free to trim or cut the salad leaves; I intentionally left them whole, but you don’t have to!

Add other things to this salad to make it more filling. Bake sweet potatoes, avocado, meat, or fish are a few to consider!
