How to Make Sweet Potato Avocado Bites.
In addition to making this sweet potato goodness, serving them is also easy peasy; pick up a loaded sweet potato rounds, and there it goes to your mouth! Uniquely, you will need only two main ingredients for this recipe โ sweet potato and avocado! Salt, pepper, spring onions, and dry cranberry could become optional; in other ways, this finger food is easily customizable!
In brief, to make my baked sweet potato avocadoย bites, you need to peel the sweet potato; on the other hand, you can equally use the potato without peeling! I personally prefer to peel it. Cut the peeled potatoes into rounds, sprinkle a littleย salt, brush a some oil on the potato, and then bake. Top with mashed avocado, aka, guacamole, aka avocado spread.

These baked sweet potato avocado bites are just the perfect appetizer, snack, and all-round best crowd-pleasing finger food! Whether you are welcoming guests or preparing for a family get-together, this healthy sweet potato rounds with guacamole is a must! Also, these healthy snacks are vegan, low carb, gluten-free, and super easy to make!
Ingredients
1 medium or large sweet potato
1 small or medium avocado
1 teaspoon olive oil or oil spray
Salt to taste
Pepper to taste
Spring or green onions (optional)
1 tablespoon dry cranberries (optional)
Instructions
- Preheat oven to 350. Wash and peel the sweet potato.
- Cut the sweet potato in circles or rounds.
- Then line them up in a baking sheet; sprinkle salt, brush a little oil on both sides, and then bake in a 350 degrees oven. Depending on their sizes, it could bake for 15 โ 20 minutes on each side (or longer, keep your eyes on it).
- Set aside and make the avocado spread.
- In a clean bowl, add avocado, sprinkle some salt, and pepper, roughly mash together, taste for flavors, and adjust appropriately, and add spring onions.
- To serve, place baked sweet potato on a plate and layer them with the avocado spread. Enjoy.
Notes
Some people bake potato without peeling, and that’s ok too. I love them peeled.
You can easily customize this recipe; this is a simple vegan recipe, but it is up to you to make it what you want. You can add bacon, hot sauce, smoked salmon, or tofu.

There’s this notion that healthy means “not tasty” but that is a bald face lie, like they’ll say in the south… Lol. Look at all this goodness, avocado with all the healthy fats your body needs and sweet potato which has iron, vitamin C and so much more.
