Ingredients for Baking Beets in the Oven
- Raw beetroots (any color and any quantity you want): Wash, peel, and cut into smaller cubes or chunks.
- Olive oil (EVOO)
- Salt (add salt to your taste)
- Black pepper
- Sprigs of fresh rosemary
- Sprigs of fresh thyme
- Maggi cube or Knorr (optional)
How to Roast Juicy Beetroots in the Oven (Step-by-Step)
When cooking the best succulent beetroots in your oven, follow this recipe. You will have the best textures and flavors!
- Preheat
Preheat your oven to 400F.
- Prep the Beetroots
While the oven heats up, get your beets ready. Trim the beet greens from the beetroots and wash thoroughly with a clean sponge, as there may be lots of sand. Peel and cut the beets into smaller chunks or cubes, making sure they’re the same size.
- Season
Place cut beets into a big bowl and add all the seasoning ingredients – olive oil, salt, pepper, Maggi, fresh rosemary, and thyme. Combine very well and taste and adjust the flavor.
- Wrap in Foil and Bake Beetroot In Oven
You will bake your beets using a large pan or a (9×13) baking pan. First, cut two 17-inch pieces of foil and spread them out in length and width, forming a cross-like shape. Then, place your seasoned beets in the middle and spread them out, gently covering them with (extra) foil. Please watch the short cooking video above. Place into your pre-heated oven and bake for 30 to 40 minutes until fork-tender and juicy. The size and quantity typically determine the baking time. You can check the beets after 25 minutes.
- Serve Warm or Cool
Remove cooked beets from foil, serve immediately or place on a platter to cool before serving.

- You can bake your beetroot without any seasoning if you are allergic or sensitive to certain seasonings.
- You can swap extra virgin olive to any oil of your choice. You can also use butter if needed.

I always say that 400F is the best temperature for roasting beets. The time will vary depending on the size of your beet cubes though. You can test them after 25 minutes with a fork or skewer.
Some recipes do not require you to peel them first, but I recommend it. It will make your life easier.
Personally, I think it is better to bake beets than boil them. On the other hand, boiled beets equally taste great. When people tell me they don’t like beets, it’s almost always because they’ve had them baked as this recipe requires. Roasting beets are much better because they give you better flavors and a wonderfully tender texture.
The best cooking method for beets is roasting them, hands down. And if you really want to split hairs, dare I say that my recipe is one of the best? I have served these to people who claim to hate beets, and every time, they are astounded because they don’t know how delicious beets can be!
Rosemary and thyme are perfect herbs for your beets, but if you don’t have those, you could use fresh tarragon, basil, or even oregano.
You can actually eat beets without cooking them first, though you will need to peel them. Also, they can be much tougher and crunchier. If you’re going to go that route, make sure you slice or grate them into thin pieces to use in salads or relishes.

Notes
Wear gloves when handling red beets because they can stain very easily. Use these gloves when you’re cutting the beets as well as when you are mixing them with the herbs and seasonings. Ensure that the chunks you cut for your beets are the same size as this helps with even cooking.
