  • 6-8 medium-size beetroots (any color and any quantity you want)
  • 1 – 2 tablespoons of olive oil (EVOO)
  • ½ teaspoon salt (add salt to your taste)
  • ¼ – ½ teaspoon black pepper
  • 2 sprigs of fresh rosemary
  • 4-5 sprigs of fresh thyme

Instructions

  1. Preheat. Preheat your oven to 400F.
  2. Prep the Beetroots. While the oven heats up, get your beets ready. Trim the beet greens from the beetroots and wash thoroughly with a clean sponge, as there may be lots of sand. Peel and cut the beets into smaller chunks or cubes, making sure they’re the same size.While the oven heats up, get your beets ready.   3. Season. Place cut beets into a big bowl and add all the seasoning ingredients – olive oil, salt, pepper, Maggi, fresh rosemary, and thyme. First, cut two 17-inch pieces of foil and spread them out in length and width, forming a cross-like shape. Then, place your seasoned beets in the middle and spread them out, gently covering them with (extra) foil. Please watch the short cooking video. Place into your pre-heated oven and bake for 30 to 40 minutes until tender and juicy. The size and quantity typically determine the baking time. You can check the beets after 25 minutes.You will bake your beets using a large pan or a (9x13) baking pan. Notes

Wear gloves when handling red beets because they can stain very easily. Use these gloves when you’re cutting the beets as well as when you are mixing them with the herbs and seasonings. Ensure that the chunks you cut for your beets are the same size as this helps with even cooking.
