How to Make Easy Kale Feta Salad from Scratch (Step-by-Step):
Get ready to have the best kale salad with these easy steps!
- Gather
Gather all the ingredients together and make life easier.
- Prep
Prep your veggies by washing them. Then slice your cucumber. With the kale, you can sort it to remove the stems if it’s precut, otherwise, pull the leaves off the stems from the whole kale leaves.
- Add Flavor and Toss
Sprinkle the kale leaves with small amounts of olive oil, salt, and apple cider vinegar. Then, while wearing gloves or using clean hands, gently massage the kale. Your kale leaves will feel a bit wilted after this. Then, follow up with the date syrup and massage it into the kale leaves too. Add the cherry tomatoes, cranberries, or raisins, and 1-2 tablespoons of chipotle salad dressing, if desired. Use tongs and toss together. Finally, taste and adjust as needed.

- Plate/serve and enjoy!
Place the kale salad into a big(ger) bowl or serving plate, then add the sliced cucumbers, feta cheese, and finish with toasted walnuts. Serve by itself or add meat/fish of choice for a complete meal! You could also add boiled egg(s)!

- This salad doesn’t require any salad dressing, which is why I put it as optional. If my kids are having some, then I make sure to have dressing handy.
- Why massage the kale? It really helps the leaves wilt a bit and gives it a better flavor.
- Rinse your pre-washed kale anyway, and let your salad spinner help you remove as much moisture as possible from any kale that you use.
- Feel free to add some pepper too if you like, my husband always does. LOL🤣
- Use goat cheese or blue cheese if no feta available.

You’ll get about 2 to 3 days out of this kale feta salad if you keep it in the fridge, though it’s so easy, it’s no trouble to make it fresh whenever you want it. If you don’t add dressing, then it won’t get soggy and will be just as delish the next day!

The kale salad from Chick-Fil-A contains kale, green cabbage, and roasted almonds that are toasted in a dressing made with apple cider vinegar and Dijon mustard. It’s a very popular item on their menu, though dare I say that my kale salad is better? I did, and I’m proud!
