  • Baking Dish. (Make a big baking dish that will accommodate the rice, vegetables, and shrimp). I actually underrated the rice quantity, and as you can see in the video, it was somewhat challenging to combine everything toward the end. 
  • Bowl. You will need a bowl to wash the raw rice.
  • Pan. You are going to need a small pan to sauté the shrimp.
  • Cooking spoon or spatula. This is for stirring/combining.

Rice:

Can you really make any fried rice without rice? Well, am sure that you already know the answer – NO! There are plenty of types of raw rice in grocery stores, and the key should be to buy high-quality long-grain uncooked (raw) rice. Don’t use the 1-minute instant quick rice. I typically use this rice brand.

Shrimp:

I am using shrimp for today’s Nigerian baked coconut fried rice; you can use any protein. In fact, in the past, I have used chicken, beef, and liver; I would typically prep these proteins the same way I will be prepping the shrimp today (sautéing). Shrimp completes this meal with the needed protein. Shrimp is a high-quality protein and equally perfect for individuals on their weight loss journey because it has lower calories than regular meat. 

Besides the benefits mentioned, shrimps provide the body with other essential minerals and compounds such as selenium, copper, iodine, vitamin B12, and many others. Ingredients for sauteing the shrimp include salt, black pepper, Knorr seasoning powder, dry thyme, and crushed red pepper.

Coconut Milk:

Coconut milk is the beautiful white “milk” liquid extracted from mature coconuts. You can easily make homemade coconut milk or use canned coconut milk (I like the Thai Kitchen brand!). Coconut milk is undoubtedly the single most important ingredient that elevates baked fried rice. It takes it from a simple oven-baked fried rice to the tastiest Nigerian baked coconut fried rice. highly encourage making this Nigerian baked coconut fried rice with a well-seasoned chicken broth! If you desire tasty + authentic fried rice comparable to Nigerian fried rice (cooked on the stovetop), you must use chicken broth. I typically use homemade chicken broth as I cook a lot, and I always have some chicken broth stored somewhere in the freezer. Though I have never used store-bought chicken broth, it should work in the absence of homemade chicken broth.

Mixed Vegetables:

Mixed vegetables are the heart of every fried rice; they make them fanciful and flavorful! Personally, I love seeing the mixture of carrots, peas, green beans, bell peppers, etc., when it comes to my fried rice. I have in various times in the past used fresh and frozen vegetables for this dish, and it comes out very delicious. In other words, feel free to use what you have on hand. Today I am making this Nigerian baked coconut fried rice with frozen veggies to save time and energy. I don’t have time to peel/chop fresh veggies. 

Herbs & Spices:

Add the herbs and spices you enjoy; I kept my herbs and spices very simple as I am using a well-seasoned chicken broth. All the flavors from my homemade broth carried over to the rice. Some herbs and spices used to make this Nigerian baked coconut fried rice include curry and turmeric. Also, Knorr powder, seasoned broth (as mentioned), and coconut milk equally added tons of flavors. Thyme, rosemary, and bay leaves will make a great addition.

Refrigerator: Nigerian baked coconut fried rice keeps very well in the refrigerator. You can store it in your fridge for up to 4 days. 

Freezer: You can absolutely store this baked fried rice in your freezer. My simple rule for storing this rice in the freezer is to pack them in small individual containers so that you can easily grab a container and heat it without touching the rest. In words, when you reheat it, you consume it. I don’t suggest reheating and re-storing. 

Another important rule I follow when it comes to freezing my rice is never to allow it to defrost if I wish to reheat it. If you allow it to defrost, it will release a lot of moisture/water, and your perfect rice may become soggy! Make sure to reheat it in your microwave immediately after you remove it from the freezer.
