African hibiscus tea is calling.

If you grew up in Nigeria, chances are you’re already familiar with Zobo! This beautiful, deep-red hibiscus drink is a popular Nigerian beverage made by boiling dried hibiscus flowers in water, often with ginger, cloves, fruits, and other flavorful ingredients. As they say, Nigerian Zobo no dey carry last… LOL! However, as a tea lover I do have other fruity teas you will love! Make sure to check out my peach iced tea, strawberry tea, and my fresh pineapple iced tea. Don’t forget my watermelon iced tea too!

Although we fondly call it Zobo in Nigeria, you’ll find similar hibiscus drinks enjoyed across Africa and beyond. In Ghana, it’s known as sobolo, while bissap is popular in Senegal and other parts of West Africa. In the Caribbean, you may know it as sorrel drink. Different names, different preparations, but one thing is certain: people LOVE their hibiscus drinks!

Let's explore the potential health benefits of Zobo drink and why it can be a delicious addition to a balanced lifestyle.

Growing up in Nigeria, making Zobo was always a familiar experience. Back then, we sometimes added artificial flavorings and plenty of sugar to make it sweeter. And listen, hibiscus is naturally tart, so I understand why people love adding sweeteners! My mother would always joke that Nigerians love their Zobo just as much as they love their rice. LOL! And honestly, some things never change!

But one of my favorite things about cooking is finding ways to enjoy familiar foods while making them my own. For this authentic Nigerian Zobo drink recipe, I’m keeping things simple, so you have no reason not to make it! I’m sticking with the traditional dried hibiscus base and using fresh pineapple juice (instead of bark), whole cloves, and fresh ginger to create a delicious, refreshing drink. While dried ginger is commonly used in Nigerian zobo, I’m using fresh ginger for this version. For sweetness, I’ll use monk fruit sweetener instead of regular sugar, and I’m skipping the artificial flavorings altogether!

Ingredients for Authentic Nigerian Zobo Drink

You don’t need a long list of ingredients to make a delicious Nigerian Zobo drink! For this recipe, I’m keeping things simple and using familiar ingredients that bring out the beautiful color, refreshing taste, and traditional flavors of homemade zobo.

Here’s what you’ll need:

  • Dried Hibiscus Flowers (Zobo Leaves): The star of this recipe! Dried hibiscus gives zobo its gorgeous deep-red color and naturally tart, refreshing flavor. Make sure to use food-grade dried hibiscus flowers.
  • Fresh Pineapple Juice: I’m using freshly juiced pineapple to add a delicious tropical flavor and natural sweetness. You can juice your pineapple at home for the freshest taste!
  • Fresh Ginger: Adds a lovely, slightly spicy kick that complements the hibiscus beautifully. Although dried ginger is commonly used in Nigerian zobo, I’m using fresh ginger for this version.
  • Whole Cloves: One of the familiar spices used in Nigerian zobo! Cloves add a warm, aromatic flavor that makes this drink extra special. A little goes a long way!
  • Monk Fruit Sweetener: Instead of regular granulated sugar, I’m using monk fruit sweetener to balance the tartness of the hibiscus. Start with a little and adjust to your preferred sweetness.
  • Water: Essential for boiling the hibiscus and extracting its beautiful color and flavor.

  1. Prepare and Juice the Pineapple

  2. Wash the Dried Hibiscus Flowers

Place the dried hibiscus flowers in a large bowl, add a sprinkle of salt, and fill with cool water. Using your hands, gently swish the leaves around to loosen any dust or debris. Immediately pour everything through a strainer and rinse thoroughly under cool running water.

  3. Boil the Hibiscus with Ginger and Cloves

Transfer the washed hibiscus flowers to a large pot and add 10 cups of water, a thumb-sized piece of fresh ginger, and a few whole cloves. Bring to a boil over medium-high heat, then reduce the heat and simmer gently for approximately 15–20 minutes to extract the beautiful deep-red color and flavors.

  4. Sweeten and Allow the Flavors to Infuse

Once the hibiscus, ginger, and cloves have finished simmering, turn off the heat. Add ½ cup 1:1 monk fruit sweetener and stir until fully dissolved, then taste. Kechi’s Tips for the Best Homemade 9Ja Zobo Drink!

Listen, making a delicious zobo drink doesn’t have to be complicated! Here are a few things I’ve learned that can help you get the best results.

  1. A little clove goes a long way! I initially tested this recipe with 2 teaspoons of whole cloves, but the flavor was too intense. One teaspoon was perfect for my large batch! If you’re sensitive to strong spices, start with ½ teaspoon or just a few cloves.
  2. Fresh pineapple juice is concentrated. I used one large whole pineapple, juiced with fresh ginger. It added wonderful flavor, but the drink was initially thicker and more syrupy than I wanted.
  3. Don’t skip the extra water! Adding another 5 cups of water made all the difference during my test. The Zobo became lighter and more refreshing without losing its delicious flavor. Start with 3 cups and add more as needed.
  4. Sweeten to your preference. I used 1½ cups of 1:1 monk fruit sweetener for my batch. However, you can start with less and adjust gradually. You can even offer additional sweetener when serving so everyone can customize their drink.
  5. Use fresh ginger in two stages. I simmered some ginger with the hibiscus and juiced the rest with my pineapple. I love how this brings out the ginger flavor in the finished drink!
  6. Keep the ice out of the pitcher. I prefer adding ice to individual glasses when serving so the entire batch doesn’t become watered down.
  7. Taste as you go! Remember, recipes are guides. Pineapples vary in size, sweetness, and juice yield, so use your taste buds to decide how much water and sweetener to add.

Zobo Drink Variations and Substitutions

One thing I love about homemade Nigerian Zobo is how easily you can make it your own! While I’m keeping this recipe close to the traditional flavors I grew up enjoying, there’s always room to adjust a few ingredients to suit your taste.

  • Adjust the Pineapple: Love tropical flavors? Add a little more freshly juiced pineapple for a fruitier Zobo drink. Just remember that pineapple also adds sweetness, so taste before adding more sweetener.
  • Make It Extra Gingery: If you enjoy a stronger ginger kick, add a little more fresh ginger when juicing your pineapple or simmering the hibiscus. You can also substitute dried ginger for fresh ginger if that’s what you have available.
  • Try Strawberry Zobo: Add fresh strawberry slices to individual glasses when serving. I personally love having little bites of strawberries in my drink. YUM! 🍓
  • Choose Your Preferred Sweetener: I’m using 1:1 monk fruit sweetener for this recipe, but you can use regular sugar, honey, or another sweetener you enjoy. Start with a little and adjust to your preferred sweetness.
  • Experiment with Spices: Whole cloves give this Zobo its lovely aromatic flavor, but you can also add a small cinnamon stick for a slightly different twist. Just remember that a little spice goes a long way!
  • Add Fresh Garnishes: Dress up your Zobo with fresh mint leaves, cucumber slices, lemon, orange, or pineapple wedges. These are especially lovely when serving guests!

Kechi’s Tip: Remember, recipes are guides! Start with the ingredients and measurements I’ve provided, then adjust the flavors to suit your preferences. The goal is to make a refreshing Zobo drink you’ll genuinely enjoy!

How to Store Homemade Zobo Drink

Homemade zobo is best enjoyed fresh and properly chilled. Once prepared, allow the drink to cool promptly, then transfer it into clean, airtight bottles or containers and refrigerate.

For a practical homemade storage guideline, enjoy it within 3–4 days when kept refrigerated at 40°F (4°C) or below.

If you’re making zobo for a gathering, I recommend preparing it ahead of time so it’s already chilled and ready to serve.

Can you freeze zobo? Yes! You can freeze it in freezer-safe containers, leaving enough space for expansion. Thaw in the refrigerator before serving.

Frequently Asked Questions About Nigerian Zobo Drink

Is Nigerian Zobo Drink the Same as Hibiscus Tea?

Yes! Nigerian zobo is a type of hibiscus tea made by boiling dried hibiscus flowers in water. However, traditional Nigerian zobo often includes additional ingredients such as ginger, cloves, pineapple, and other spices, giving it a more flavorful and refreshing taste than plain hibiscus tea.

Is Zobo the Same as Sobolo, Bissap, or Sorrel?

These drinks are closely related because they share dried hibiscus as their main ingredient. Zobo is popular in Nigeria, sobolo in Ghana, bissap in Senegal, and sorrel in the Caribbean. Although they have similar origins, the ingredients and preparation methods can vary depending on the country and family tradition.

Can I Use Dried Ginger Instead of Fresh Ginger?

Absolutely! In fact, dried ginger is commonly used when making Nigerian zobo. I’m using fresh ginger in this recipe because I love its refreshing flavor, especially when juiced alongside the pineapple. If using dried ginger, start with a small amount and adjust to taste.

Why Does My Zobo Drink Taste Sour?

Hibiscus flowers are naturally tart, so a little sourness is completely normal! If your zobo tastes too tart, try adding more fresh pineapple juice or adjusting your preferred sweetener. Remember, the goal is to balance the tartness with just enough sweetness to suit your taste.

Can I Make Nigerian Zobo Drink Ahead of Time?

Yes! Homemade zobo is a fantastic make-ahead drink, especially when you’re hosting family or friends. Prepare it ahead of time, refrigerate it promptly in a clean, airtight container, and serve chilled. I recommend enjoying it within 3–4 days when properly refrigerated.

Can I Serve Zobo Drink at Parties and Special Occasions?

Of course! Zobo is perfect for family gatherings, birthdays, holidays, and celebrations. I especially love serving it in a beautiful pitcher or beverage dispenser with fresh fruit slices. For my 2026 Friendsgiving gathering, I’m serving this refreshing Nigerian drink alongside dishes inspired by different cuisines. And yes, I’m excited! 😂

Can I Make Zobo Drink Without a Juicer?

Yes! If you don’t have a juicer, you can blend fresh pineapple with a little water and strain it through a fine-mesh sieve to extract the juice. You can also use unsweetened, 100% pineapple juice as a convenient substitute. Just adjust the quantity and sweetness to your preference.

Description

Zobo drink, also known as African hibiscus tea, is more than just a beautiful, refreshing beverage! Made from dried hibiscus flowers, this popular Nigerian drink contains antioxidants and plant compounds that may support overall wellness. Research also suggests that hibiscus tea may help support healthy blood pressure levels. Let’s explore the potential health benefits of Zobo drink and why it can be a delicious addition to a balanced lifestyle.

Ingredients

Scale
  • 2 cups dried organic hibiscus flowers (zobo/sorrel leaves)
  • 10 cups water, for boiling
  • 3–5 additional cups water, for diluting to your preferred consistency
  • 1 large whole fresh pineapple, washed, peeled, and cut into pieces suitable for juicing
  • 2 large thumb-sized pieces of fresh ginger, divided
  • 1 teaspoon organic whole cloves (use ½ teaspoon or a few cloves for a milder flavor)
  • 1½ cups 1:1 monk fruit sweetener, or cane sugar to taste
  • Optional garnishes: Fresh mint leaves, cucumber slices, lemon slices, orange slices, or pineapple wedges.

Instructions

Step 1: Prepare the Fresh Pineapple-Ginger Juice

  1. Wash, peel, and cut your fresh pineapple into chunks. Wash and peel one large thumb-sized piece of fresh ginger.
  2. Using a juicer, juice the pineapple and ginger together. My very large pineapple yielded approximately 4 cups of fresh pineapple-ginger juice. Your yield may vary depending on the size and juiciness of your pineapple.
  3. Set the juice aside in the refrigerator while you prepare the hibiscus tea.

Step 2: Wash the Dried Hibiscus Flowers (Zobo Leaves)

  1. Place the dried hibiscus flowers in a large bowl, add a sprinkle of salt, and fill with cool water. Using your hands, gently swish the leaves around to loosen any dust or debris.
  2. Immediately pour everything through a strainer and rinse thoroughly under cool running water.
  3. Important: Please do not soak the hibiscus flowers! We’re only giving them a quick wash to remove dust and debris, not allowing them to sit in water and release their beautiful color and flavor before cooking.

Step 3: Boil the Hibiscus Flowers with Ginger and Cloves

  1. Transfer the rinsed hibiscus flowers to a large stockpot. Add 10 cups of water, the second large thumb-sized piece of fresh ginger, and 1 teaspoon of whole cloves.
  2. Bring everything to a boil over medium-high heat. Once boiling, reduce the heat and allow the mixture to simmer gently for about 15–20 minutes, until the water develops a deep, rich red color and the hibiscus, ginger, and cloves have infused their flavors.

Step 4: Add Some Sweetener and Allow the Zobo to Cool

  1. Turn off the heat and carefully move the hot pot onto a heat-resistant trivet on your countertop.
  2. While the hibiscus flowers and spices are still in the pot, add ½ cup of 1:1 monk fruit sweetener and stir until dissolved. Allow the Zobo to cool slightly, giving the hibiscus, ginger, and cloves a little more time to infuse.
  3. Don’t add all the sweetener at once! Remember, we’re still adding fresh pineapple juice, which brings its own natural sweetness. You can always add more sweetener later, but you can’t take it out once it’s in! LOL!

Step 5: Strain the Zobo and Add Fresh Pineapple-Ginger Juice

  1. Once the Zobo has cooled enough to handle safely, carefully strain it through a fine-mesh sieve into a large, heat-safe bowl or container. Discard the hibiscus flowers, ginger, and cloves.
  2. Pour in your freshly extracted pineapple-ginger juice (approximately 4 cups) and stir until well combined.
  3. Give it a taste! The pineapple adds a lovely fruity flavor and natural sweetness, so you may already find that your Zobo is sweet enough. If not, you can add more monk fruit sweetener gradually.

Step 6: Add More Water and Adjust to Your Taste

  1. At this point, your Zobo may taste quite concentrated, especially if you’ve used a large, juicy pineapple.
  2. Gradually add 3–5 cups of additional drinking water, stirring and tasting as you go. During my Sunday recipe test, I added the full 5 cups, and it made all the difference! My Zobo went from tasting a little thick and syrupy to being light, refreshing, and still wonderfully flavorful.
  3. Now taste again and adjust the sweetness as needed. I used 1½ cups of 1:1 monk fruit sweetener in total for my batch, including the initial ½ cup added in Step 4.

Step 7: Chill, Garnish, and Enjoy!

  1. Transfer your finished Zobo drink into clean pitchers or airtight bottles and refrigerate promptly until thoroughly chilled.
  2. When ready to serve, pour the chilled Zobo over ice in individual glasses. Garnish with fresh orange slices, mint leaves, and thinly sliced mini cucumbers for a refreshing finishing touch.
  3. During my recipe test, I offered orange, lemon, and lime slices, fresh mint leaves, and mini cucumber slices. Guess what? Everyone gravitated toward the oranges, mint, and cucumbers. Nobody touched the lime! LOL!
  4. Of course, you can garnish yours however you prefer. Serve chilled and enjoy your beautiful, vibrant, homemade Nigerian Zobo drink!
  5. Store leftover homemade Zobo drink in clean, airtight glass bottles in the refrigerator for up to 3–4 days.

Notes

A little clove goes a long way! I initially tested this recipe with 2 teaspoons of whole cloves, but the flavor was too intense. One teaspoon was perfect for my large batch! If you’re sensitive to strong spices, start with ½ teaspoon or just a few cloves.

Fresh pineapple juice is concentrated. I used one large whole pineapple, juiced with fresh ginger. It added wonderful flavor, but the drink was initially thicker and more syrupy than I wanted.

Don’t skip the extra water! Adding another 5 cups of water made all the difference during my test. The Zobo became lighter and more refreshing without losing its delicious flavor. Start with 3 cups and add more as needed.

Sweeten to your preference. I used 1½ cups of 1:1 monk fruit sweetener for my batch. However, you can start with less and adjust gradually. You can even offer additional sweetener when serving so everyone can customize their drink.

Use fresh ginger in two stages. I simmered some ginger with the hibiscus and juiced the rest with my pineapple. I love how this brings out the ginger flavor in the finished drink!

Keep the ice out of the pitcher. I prefer adding ice to individual glasses when serving so the entire batch doesn’t become watered down.

Taste as you go! Remember, recipes are guides. Pineapples vary in size, sweetness, and juice yield, so use your taste buds to decide how much water and sweetener to add.
