Whenever you attend a Nigerian party, if you don’t see peppered assorted meat, you will see peppered snails, or peppered chicken or Nigerian peppered goat meat, or Nigerian peppered fish. Sometimes you will see every kind of peppered recipe at one party, lol, Nigerians sure know how to party, and when they do, our food is always represented. So, it is normal to hear people refer to this recipe as party peppered meat.
Peppered meat is gluten-free, dairy-free, and keto-friendly; this recipe is packed with high-quality protein. The best thing about making Nigerian peppered meat recipe is that you can use any meat, and today I am using beef tongue, aka cow tongue. What is Peppered Meat Recipe?
Peppered meat recipe is the cooking or sautéing of meat, fish, or snail in a delicious peppery sauce (aka pepper sauce). Typically, you will first boil the meat (fish or snail). Then fry, and finally sauté or stew them in (an already made) pepper sauce. I took a shorter route for this recipe; I didn’t have to fry or broil the beef tongue. How to make Peppered Meat more Flavorful.
When it comes to cooking any food, especially Nigerian foods, we go big on flavors, and by that, I mean spices. If you have ever tried any Nigerian food, I am sure you will agree that we are always finger-licking good. This is why I am so excited to use All-Purpose Chile Blend from Spice Tribe to make this, also known as California Love; this spice is currently my go-to spice. I have been using tons of spices from Spice Tribe, and I LOVE IT, for many reasons. First, they are all-natural spices. Second, Spice Tribe spices contain no additives, and third, they are non-GMO and salt-free.
Ingredients for Nigerian Peppered Meat Recipe.
- First of all, in other to make a Nigerian peppered meat recipe, you will need meat, and the best part is that you can use any meat that you want, whether it is beef, goat, or offal meat. For instance, I am using the beef tongue for today’s recipe.
- Besides the meat, you will need peppers – assorted peppers such as bell peppers, scotch bonnets (or habanero), serrano, poblano, and jalapeño. It is important to realize that the spicy peppers will surely bring on the heat, always adding according to your taste. It is ok to reduce when in doubt, sometimes I remove some of the seeds of the poblano.
- Finally, to make mouth-watering Nigerian peppered meat, you need onions, tomato, olive oil, Maggi, salt and pepper, and any other herbs and spices of choice. I used the All-Purpose Chile Blend from Spice Tribe, among others.
How to Make Peppered Meat using Beef Tongue (Step-by-Step)
Step one: Prepare the meat, and blend the peppers.
First, prepare the meat. This would involve boiling the meat to tenderness; if the meat is hard, you will rarely enjoy this recipe. Relatively, prepare vegetables – peppers, onions, and garlic. Wash them, and then roughly blend using a food processor.
Step two: Make the Pepper Sauce.
Start by hitting up some olive oil to sauté the pepper blend. Next season generously with herbs and spices, taste and adjust. Then, cook the pepper blend until the liquid visibly reduces, and finally, add the beef tongue.
Can I make Nigerian Peppered Meat without First Frying the Meat?
Yes, you can make peppered meat without first frying the meat, for instance, in this recipe. I boiled the beef tongue until very tender, and I used it without frying. Yet, this recipe turned out so well and tastes insane!
How to Serve Nigerian Peppered Meat.
In Nigeria, and in most Nigerian parties, Nigerian peppered meat is usually served as a starter or what we know as an appetizer here in America. One of the best ways I love to serve this recipe is with white rice. My husband prefers it always with quinoa, as the plate below. If you tend to keep this recipe as low carb, I suggest serving it with cauliflower rice. You can also serve peppered meat with potatoes and yams.

Nigerian Peppered Meat Recipe with Beef Tongue

This dish is flavorful, hot (I mean spicy hot), mouth-watering, lip-smacking, and irresistibly delicious. A must-try, and packed with high-quality protein. The best thing about making Nigerian peppered meat recipe is that you can use any kind of meat, and the next best thing is that you can tailor the spiciness to your need.
You can serve Nigerian peppered meat with white rice, quinoa, cauliflower, potatoes, and yams. This recipe can make an excellent appetizer, and it is a sure crowd-pleaser.
1 Whole Beef Tongue (3 lbs. of beef tongue)
2½ teaspoons of Spice Tribe All-purpose Chile Blend (California Love)
2 big bell peppers (1 orange and 1 yellow)
1 fresh plum tomato
1 big bulb of onion (plus another half for boiling the meat)
3 cloves of garlic (plus another two for boiling the meat)
3 scotch bonnets
2 serrano peppers
¼ cup of Olive oil
2 Maggi (plus two more for boiling the meat)
2 teaspoons of salt (plus more if needed).
½ teaspoon of dry thyme (or less)
A dash of black pepper
2 tablespoons of chopped bell peppers, green onions, and parsley (for garnishing)
- Wash and clean the beef tongue properly. Dry with paper towels, cut into small bite sizes and add to a clean pot. Add ½ bulb of onions, 2 cloves of garlic, one teaspoon of Spice Tribe Chile blend, 2 Maggi cubes, one teaspoon of salt, add water until well over the meat. Cover and cook until very tender. Strain and set aside.
- Wash, and quarter the bell peppers and onions. In a food processor, add the onions, garlic, tomato, all the peppers except for one serrano. Roughly blend so that texture is still visible.
- Set a clean pan on the stove, and add olive oil, and allow to warm up. Gently add the pepper blend to the hot oil. Stir.
- Allow to simmer, and stir in the salt. Then, add one teaspoon of the Spice Tribe All-purpose Chile Blend, stir. Add the Maggi cubes, thyme, black pepper, give a good stir. Taste for flavors, and adjust.
- Cover and cook on medium-low until the liquid visibly reduces; may take up 15 – 20 minutes (depending on the quantity of the sauce)
- Stir and taste again; add another ½ teaspoon of the Chile Blend if necessary. Then add the cooked beef tongue. Ensure to incorporate into the sauce. Cover and allow to simmer on low for another 5 – 7 minutes.
- Garnish with a serrano, chopped bell peppers, green onions, and chopped parsley. Serve with boiled rice, quinoa, yams, etc. This recipe serves up to 16 people if used as appetizer, and about 6 if used as main dish sauce.
You can use any other type of meat for this recipe.
Wear gloves when handling the peppers especially the spicy peppers. And wash your hands immediately afterwards, avoid touching your face.
Okay, to reduce the amount of pepper. This is a very spicy recipe, always tailor the heat to your taste. You can also remove some seeds of the peppers – (I typically remove half of the seeds of the poblano)
If using already boiled meat or leftover meat for this recipe, then no need to boil the meat (again)
Use any color of bell peppers, but always remember that the colors will affect how this dish looks. If you want them to have a yellow shade then yellow/orange peppers are essential.
Always use salt according to your taste.
