Christmas is hands down my favorite holiday, and yes โ€” I celebrate all month long! As soon as Thanksgiving wraps up, itโ€™s officially Christmas over here. ๐ŸŽ„ This healthy, stress-free Christmas dinner gameplan isnโ€™t just advice Iโ€™m sharing with you โ€” itโ€™s a reminder for myself too.

While our menus may look different, this year Iโ€™m keeping our Christmas dinner simple, classic, and proudly Nigerian-themed. My mostly make-ahead, stress-free Christmas dinner menu will feature the one and only Nigerian fried rice (because the color it brings to the table is unmatched!). Followed by Nigerian peppered chicken โ€” think along the lines of my peppered beef tongue recipe. There will also be duck confit (another make-ahead gem). My cozy Harvest Quinoa Pilaf will be our second side dish! Of course, no Nigerian Christmas is complete without meat pies, 9ja buns, and chin-chin. For drinks, weโ€™re keeping it simple with Nigerian zobo drink, also known as hibiscus tea. And honestly? We donโ€™t really do appetizers in Nigeria โ€” the meat pies take care of that for anyone who wants a little something before the main event. Nigerian Christmas food never disappoints, so my guests and family are so thrilled!

Learn the basics of making the most delicious Nigerian fried rice, and then make it your way when you desire each time. I served this dish with baked chicken thighs but can use any other protein. Roast carrots, onions, and garlic until softened. Simmer with broth and ginger, then blend until smooth. Adjust seasoning and reheat gently before serving.

Blanch beans briefly until bright green. Sautรฉ garlic in olive oil, then add tomatoes and beans, cooking until lightly softened. Season, and finish with a splash of balsamic if desired.

6. Mashed Sweet Potatoes with Coconut Milk

Ingredients:

  • 3โ€“4 large sweet potatoes
  • 1/2 cup coconut milk
  • 1/4 cup coconut cream
  • 1โ€“2 tbsp butter or coconut oil
  • 1/2 tsp cinnamon
  • Salt to taste

Instructions:

22 December

  • On this 3 days to Christmas, prep all hearty vegetables. Peel and chop carrots, onions, and garlic for the soup.
  • Peel and chop sweet potatoes. tore submerged in cold water in the refrigerator.
  • Trim green beans and slice cherry tomatoes if using.
  • Segment oranges and prepare pomegranate seeds.
  • Whisk salad dressing (olive oil, lemon juice, honey, salt, and pepper) and store in a jar.
  • Combine the herb rub ingredients for the chicken (olive oil, garlic, lemon zest and juice, herbs, salt, and pepper).

23 December

  • Make the roasted carrot ginger soup: roast the vegetables, simmer with broth and ginger, blend, cool, and refrigerate.
  • Boil sweet potatoes until tender; drain and refrigerate. (note: do not mash yet)
  • Prepare aromatics for roasted chicken: quarter the onion and have lemon and herbs ready.

December 24 (Christmas Eve)

  • Roast the chicken today if you want a more relaxed Christmas Day. Cool, then store whole or carved in the refrigerator. You will reheat it gently on Christmas Day.
  • Slice cucumbers for the appetizer and refrigerate in an airtight container.
  • Portion salad components: spinach in a salad bowl, oranges, cranberries, and nuts stored separately.
  • Prepare the mocktail base by combining cranberry juice, orange slices, and ginger; refrigerate to infuse overnight.
