How to Make Vegan Sugar-Free Condensed Milk (Step-by-Step)
Whether you want to make my healthy pumpkin spice latte with this dairy-free and sugar-free condensed milk or use it in another baking recipe, you’ll find tons of uses for it!
- Heat
In a pan on your stovetop, add the coconut milk, monkfruit sweetener, and vanilla extract (if using it), and combine. Stir and keep it on medium-low heat to dissolve the (monkfruit) sweetener without letting it settle. Then, bring it to a boil.
- Simmer
Once it boils, reduce the heat to low to keep simmering for 30 minutes (or more depending on the quantity). It should thicken, reduce, and slightly change color. Stir it every 5 to 7 minutes to keep it from sticking to the bottom.
- Remove from Heat.
Be sure to remove your condensed milk from the stove and transfer it into a heat-proof jar as soon as it finishes cooking. Then allow cooling.
- Cool and Store
You must let this cool before you store it. It thickens up even more after it cools. An airtight mason jar makes a perfect container for storing. Or better still, use (2-tablespoon) individual containers, which is ideal if you wish to freeze them.
Dairy-Free + Sugar-Free Condensed Milk Uses
Use this healthy vegan sweetened sugar-free condensed milk for your coffee, pumpkin lattes, or any recipe that calls for condensed milk.
Storage Tips:
Refrigerator: after this cools, you will want to put it in a mason jar or another airtight container. Put it in your fridge, and it should keep for 2 weeks up to 3 weeks.
Freezer: you can surely store your leftover condensed milk in the freezer for up to 3 months. However, I suggest placing them into small, individual freezer-friendly containers. I typically put them in 2-tablespoon containers, which is the serving size.
Make sure to bring frozen sweet condensed milk to room temperature before using it. And do not heat them in the microwave in other to defrost them.
