Healthy, vegan sugar-free condensed milk requires only two ingredients and is super easy to make! You will need coconut milk and monk fruit to make this simple condensed coconut milk recipe, and you can easily swap it for any recipe that calls for sweetened condensed milk. The healthy vegan sugar-free condensed coconut milk is dairy-free, gluten-free, whole-30, keto, and downright delicious!
- Heat. In a pan on your stovetop, add the coconut milk, monkfruit sweetener, and vanilla extract (if using it), and combine. Stir and keep it on medium-low heat to dissolve the (monkfruit) sweetener without letting it settle. Then, bring it to a boil.
- Simmer. Once it boils, reduces the heat to low to keep simmering for 30 minutes. It should thicken, reduce, and slightly change color. Stir it every 5 to 7 minutes to keep it from sticking to the bottom.
- Remove from Heat. Be sure to remove your condensed milk from the stove and transfer it into a heat-proof jar as soon as it finishes cooking. Then allow cooling.
- Cool and Store. You must let this cool before you store it. It thickens up even more after it cools. An airtight mason jar makes a perfect container for storing. Or better still, use (2-tablespoon) individual containers, which is ideal if you wish to freeze them.
Make sure to use full-fat coconut milk.
Slow and low. This needs to cook slowly and at a low temperature, so it thickens up without burning on the bottom.
Don’t let the monkfruit sweetener settle after adding it. You want to keep stirring to have it fully incorporated.
Don’t want it sweet? You don’t have to add any sweetener if you just need condensed milk rather than sweetened condensed milk.
If you don’t care about using a non-sugar sweetener, use any sweetener of your choice!
For the most part, the serving size of this homemade sweet condensed milk is one tablespoon. However, feel free to sweeten your beverage to your taste.
