BEST Ever Healthy Summer Chicken & Corn Salad
We literally eat this healthy chicken salad all summer long—even in spring! As long as we can find fresh corn, I’m making it. What Is Summer Salad Made Of?
First of all, there is a wild variety of summer salads out here on the internet, LOL. One thing any good summer salad should have is summer fruits or vegetables. Additionally, summer salads should be cooling and refreshing and require less cooking time. Ain’t no one trying to cook up the storm in sweltering heat!
Now, let’s talk about this summer salad! My summer salad is made with chicken breasts, fresh corn, English cucumbers, apples, bell peppers, and red onions tossed in a creamy lime dressing. It’s bright and invigorating, the perfect thing your taste buds need this summer! We love serving this with additional cooked corn-on-the-cob! YUM!

Ingredients for Chicken Fresh Corn Salad:
- Chicken breasts
- Fresh corn on the cob
- English cucumbers
- Apple (chopped)
- Red bell pepper (chopped); not pictured below but I used it.
- Yellow bell pepper (chopped)
- Red onions (chopped)
- Olive oil to sauté the chicken
For the dressing:
- Light mayo
- Light sour cream
- Lime (juiced)
- Zest from lime
- Honey or monk fruit sweetener
- Olive oil
- Salt and pepper to taste
How to Make Crunchy Chicken Fresh Corn Salad at Home (Step-by-Step):
Delicious, crunchy, but with creamy dressing. Also, cooling and revitalizing, this is the perfect chicken salad to make on a hot summer day!
- Prep
Wash and cut all the vegetables, except the corn, and set aside.
- Cook the Chicken
Next, prepare your chicken by rinsing it with water and patting it dry with a paper towel. Slice each chicken breast in the middle, then liberally season with salt, pepper, and a little onion powder. Sauté the chicken for 5 – 7 minutes on each side until fully cooked. Use a meat thermometer to ensure your chicken is well done. Allow the chicken to cool, then cube and set aside.
- Prep and Cook the Corn
Wash your corn on the cob and pat it dry with paper towels. Use foil to wrap your cutting board (for easy clean-up). Then, stand the corn on it (holding it up with one hand). Hold your sharp knife in the other hand, and, using the knife, slice down the corn from the cob. The corn kernel will collect on your cutting board. Repeat as needed.
Add the corn kernels to a frying pan with a tablespoon of olive oil and sauté this for 2 to 3 minutes. Don’t add any seasoning except black pepper when cooking the corn. Then, turn off the stove, scoop out the cooked corn, and set aside. - Make the Dressing
Add the dressing ingredients – mayo, sour cream, lime zest, honey or Monk fruit, olive oil, lime juice, salt, and pepper – to a bowl. Mix well, then taste and adjust flavors if needed.
- Assemble the Chicken Fresh Corn Salad
Add the chicken, corn, cucumber, bell peppers, corn, apple, and onions to a huge mixing bowl and pour the dressing on them. Then, use a big fork or salad tongs to combine. Coat all the ingredients in the dressing and enjoy!

How to Store Leftovers of Chicken Salad
Chicken fresh corn salad is always best when it’s fresh, so make sure you don’t make more than you need. It can only be stored in the fridge for up to 2 days within an airtight container. The good news is that it’s so quick and easy to make that you can whip up more in a jiffy!

- Don’t add salt or seasoning powder to the corn, as it will interfere with the other flavors. If you can’t resist seasoning, just add black pepper.
- You can prep the chicken ahead of time and assemble the salad when you’re ready.

Variations and Substitutions
- Don’t have a lime? You can use a lemon or any other citrus fruit, though it will slightly change the flavors.
- Feel free to use regular mayo and sour cream if that’s what you have in your kitchen.
- Try a pear instead of an apple or even a fresh peach.
- Add some feta cheese and olives for more of a Mediterranean twist.

My summer salad is very similar to a Mediterranean chicken salad. The only big difference is that mine doesn’t include feta cheese.
For the most refreshing salad, the chicken should be cold or at least room temperature. This salad can be eaten while warm and is absolutely delicious, though serving it cold is preferable on hot days.
Yes! Chicken breast is a lean protein and helps you make a fully rounded meal. If you are vegetarian, you can omit the chicken, but if you eat meat, don’t skip it!
You can serve this chicken salad with your favorite bread or buns, lettuce leaves, crackers, or cucumber slices. I’ve linked some of my favorite sides that will go well with this chicken salad above.
Plain Greek yogurt is an excellent swap for mayo that will blend well with sour cream. You can also use avocado because of the creamy texture, but it will change the original flavors of this salad.
You need to eat this within 2 days for maximum freshness. Some people may keep it up for 4 days, though. However, I wouldn’t.
