Since the start of summer, this blueberry watermelon feta salad recipe with balsamic reduction has been on repeat in my house. Gladly, my entire household loves it just as they do our very popular watermelon appetizer! (Another cheap and easy red, white and blue recipe idea). This super easy peasy summery salad recipe is definitely a beauty to behold, and I am excited to share it with you!
Healthy and fresh blueberry watermelon feta salad is refreshingly sweet, savory, and easy to make! The best part about this recipe is that it comes together so fast and it is cheap with readily available ingredients! This easy watermelon salad needs only four main ingredients – fresh watermelon, blueberries, feta cheese, and mint leaves. I dressed this baby with balsamic reduction to spice things up. To be honest, this was uniquely magnificent! Let’s just say that this is the best summer salad you need! Listen, with the summer heat, you do not have to worry about turning on the stove. Put this salad on repeat, and you will be JUST fine. At least that’s what I will be doing! 🙌🏾
INGREDIENTS FOR BLUEBERRY WATERMELON FETA SALAD RECIPE:
Blueberries:
Not only are blueberries nutritious; their beautiful blue color gorgeously complements this salad! Also, there can never be a blueberry watermelon feta salad with blueberries. Alternatively, blackberries are an excellent replacement for blueberries in this salad recipe. Some Benefits of Blueberry includes:
- They have a high amount of calcium, phosphorus, iron, zinc, etc.
- Fantastic for bone health.
- Can control/lower high blood pressure,
- Can fight cancer,
- It’s heart-healthy,
- Immune-boosting.
- Blueberry is a Superfood that keeps us younger lookingPotent antioxidants + plenty of reasons
Watermelon:
Unfortunately, you cannot make this watermelon salad without watermelon. As we all know, watermelon is 90% water. It is indeed the ultimate hydration. As a result, this salad will easily keep you hydrated, which is fantastic, especially with the crazy summer heat! The only drawback about going way overboard with watermelon is that it contains many natural sugars. Be watchful if you have concerns about blood sugar spikes. I love making this salad whenever watermelon and blueberry are in season. And that is during the summer here in the United States. But, if you live in a country where these fruits are in season all year rounds, do enjoy! Some watermelon benefits includes:
- Ultimate hydration; will keep you hydrated.
- Immune-boosting.
- It can improve heart health.
- May help prevent certain cancers.
- Reduces inflammation
- Great for joint and muscle and can reduce soreness.
- Excellent for eye health and many other things.
Feta Cheese:
Crumble some feta cheese over this simple summer salad to nail the classic red, white and blue July 4th salad recipe! If possible, buy a block of feta cheese; that way, you cut it the same way you cut the watermelon for a more visually pleasing presentation! I used what I have, and thankfully it worked!
Mixed Greens or Salad Greens:
Ordinarily, any type of salad greens would work perfectly well here! However, this is optional but I highly recommend it; I typically used spring mix). Adding mixed salad greens to this fruit salad is optional. However, it adds more nutrients and texture to elevate this simple summer salad! I used “half and half,” a mixture of baby spinach and spring mix.
Balsamic Reduction:
Personally, I think balsamic reduction is the best dressing for blueberry watermelon feta salad! It adds a uniquely intense flavor as wells the right kick (to this summer salad) that makes this bowl almost unforgettable! I make my balsamic reduction (aka, balsamic glaze) with high-quality balsamic vinegar. It is naturally gluten-free, vegan, and paleo-friendly; get my homemade balsamic reduction recipe here! On the other hand, you can try my easy citrus vinaigrette. I have used it in the past. If you don’t have balsamic vinegar reduction, this works really well.
Mint Leaves:
Herbs are essential for this blueberry watermelon feta salad. Mint leaves are usually my go-to! They are both flavorful and medicinal! Mint is one of my favorite herbs, and it definitely elevates this blueberry watermelon feta salad. Typically, I use only a couple of leaves (from a sprig). This is because I don’t want it to overpower the salad! On the other hand, basil would work just fine! In reality, do use any herb of choice – mint, basil, thyme, etc.!
HOW TO MAKE BLUEBERRY WATERMELON FETA SALAD:
- Wash the watermelon very well. Possibly, scrub it down, then dry with a paper towel before peeling and cutting. Cut in cubes, and use as much as you want. I used about 2 cups.
- Wash the blueberries, and dry off excess water using a paper towel.
- Clean/wash, trim or cut the greens (if using some); if your greens come triple-washed, you do not need to wash them. Suppose you do have to wash the greens; please dry excess water with a paper towel. I typically do not bother to cut my greens.
- Layer the bottom of your clean salad bowl with the greens.
- Add the watermelon cubes on top of the salad greens (as much as you want)
- Throw in the blueberries (I used about half a cup)
- Then sprinkle the feta cheese.
- Throw in a couple of mint leaves; this is optional, but I highly recommend it as it adds tons of flavors.
- Finally, sprinkle 1 – 2 teaspoons (or 1 tablespoon) of balsamic reduction. I find two teaspoons to be enough! Enjoy this blueberry watermelon feta salad with friends and family! To be honest, you can easily finish this by yourself! However, this is about 2 servings!
