This quinoa bowl recipe is perfect for a quick weekday lunch or dinner. Equally, this is a fantastic meal prep recipe! You can easily make the quinoa, black beans, and chicken ahead, then put them together when you desire to eat. YIPPIE!

What is Quinoa?
Quinoa is a gluten-free, whole-grain carbohydrate. Also, quinoa is a whole protein (meaning it contains all nine essential amino acids). I tried researching quinoa; I found that quinoa is a seed of a “flowering plant,” so technically, quinoa is not a grain but a “pseudo-cereal.” Generally, though, we refer to quinoa as a whole grain; it is rich in dietary fiber, B vitamins, and plenty of other nutritional minerals.
The world is on quinoa revolution right now (like avocado); make sure to check out my quinoa stuffed bell peppers and Quinoa fried rice too! Generally, there are three types of quinoa readily available in the market: red, white, and black; I use the white one for this quinoa bowl recipe.
HOW TO COOK RAW QUINOA FROM SCRATCH:
To make this quinoa bowl recipe with black beans, you need already cooked quinoa. So, first, let’s cook quinoa from scratch. Second, black beans.
- Place 1 cup of quinoa in a colander and wash in cold water to ensure that the quinoa does not slip out as you wash them. Quinoa can easily slip through your finger. Then leave on a colander so that it will continue to drain.
- Add 1½ cups of chicken broth to the pan and set the stove on medium. Bring to a boil, then add washed quinoa and 2-3 bare leaves, cover, and cook for 15 minutes. Turn off the stove and allow the quinoa pan to sit/rest covered for another 5 minutes. Use for any recipe such as this one.

HOW TO COOK BLACK BEANS FROM SCRATCH:
It is no secret that I love LOVE beans, and even though I typically ate black-eyed peas and brown beans growing up, I also have embraced black beans since living in America. Back to the matter at hand – “Quinoa Bowl Recipe with Black Beans,” we shall need already cooked black beans. I will show you how to cook black beans from scratch; however, you can use canned/store-bought black beans. This is how to raw black beans: ⬇️
- Wash beans and soak overnight or for at least 6 hours. You can definitely cook it without soaking it, but I loved it this way.
- The following day or after 6 hours, rinse the beans very well and add to a clean pot.
Add a good amount of water, some salt to taste, bare leaves, and seasoning cubes. - Cover and cook for 50-60 minutes or until the bean is tender. The beans should have almost absorbed the water by this time. However, you can remove excess water if need be.
- Set aside to cool, use in different recipes such as this healthy quinoa bowl!

INGREDIENTS FOR THIS QUINOA BLACK BEANS BOWL:
- Cooked quinoa (I typically cook this one)
- Cooked black beans or store-bought canned beans.
- Chicken breast (sautéed or pan-fried; set aside)
- Mixed vegetables
- Fresh baby spinach
- Avocado
- Onions
- Green onions
- Garlic
- Bell peppers
- Tomatoes
- Parsley
- Salt
- White pepper or black pepper
- Extra virgin olive oil
- Bouillon seasoning powder or Maggi cubes.
How to Make This Quinoa Bowl and Black Beans
- PREP INGREDIENTS. Wash, and cut all the vegetables, set aside.
Clean the chicken breast, cut in the middle, season with salt, pepper, and bouillon seasoning powder. Spray an oil spray (or use EVOO) and sauté on both sides until fully cooked. Set aside until ready to plate this quinoa bowl! - FOR THE QUINOA. Place a clean pot/pan on the stove, add oil and allow to heat up. Then add onions, garlic, cook for 1 – 2 minutes and add bell peppers. Cook for another minute or two and then add the frozen vegetables. Add a dash of salt, pepper, and seasoning, make sure to mix well, cook for 2 minutes, and then add the quinoa. Stir very well to ensure that everything blends well. Taste and adjust flavors, cook 2 – 3 minutes, making sure that the quinoa has properly heated up. Set aside to be served with black beans.
- FOR THE BLACK BEANS. Add 1 – 2 teaspoon(s) of EVOO to a clean pan, heat up and sprinkle small salt, and add onions, bell peppers, and greens onions. Cook for 1 – 2 minutes to soften. Then add chopped fresh tomatoes, and cook for 2 minutes or less. Finally, add the (already cooked) black beans. Sprinkle a little ground white pepper and seasoning powder—Cook for about 3 minutes or more (until it thoroughly heats up). Be sure to taste and adjust flavors as needed and set them aside until ready to make this quinoa bowl recipe or any other thing you desire.
- HOW TO ASSEMBLE THIS QUINOA BOWL RECIPE WITH BLACK BEANS. Lay the spinach on the bottom to the side of the bowl. Then add the sautéed quinoa, black peppers, and chicken. Mash half of an avocado with salt, pepper, and add some to the bowl. Sprinkle some chopped parsley and green onions. Finish by adding a couple of slices of avocado. Enjoy with a loved one; this recipe serves two.

Ingredients
- 1 chicken breast (sautéed and set aside)
- 4 cups of fresh spinach (divide in between 2 bowls)
- 1 ripe avocado (mash half and slice half)
- 2 tablespoons of chopped parsley
- 2 tablespoons of extra virgin olive oil (EVOO)
- White pepper to taste (or black pepper)
- Salt to taste
- 1 teaspoon bouillon seasoning powder (or less; for all the cooking)
For sauteing the quinoa
- 1 cup cooked quinoa (I typically use this one)
- ½ – 1 cup of frozen mixed vegetables or just frozen peas
- ¼ cup onions; chopped
- 2 tablespoons of freshly chopped green onions
- 2 garlic cloves
- 2 tablespoons of freshly chopped bell peppers
For the Black Beans:
- 1 cup of cooked Black Beans or store-bought canned beans.
- ¼ cup of onions (or less)
- 2 tablespoons freshly chopped bell peppers
- 1 small tomato or half of a big one (chopped)
- 2 tablespoons of freshly chopped green onions
Instructions
- Wash, and cut all the vegetables, set aside.

Notes
Soaking the beans is optional, but it makes it easier to cook.
I highly suggest coking quinoa and black beans ahead.
As mentioned in the post, you can use canned or store-bought black beans for this recipe. Feel free to use the vegetables you like and eat.
