How to Make Healthy Black Bean Veggie Burgers (Step-by-Step)
If youโre looking for a plant-based burger without processed ingredients that truly delivers on flavor, follow these steps! (Please see the recipe card for more tips and extended explanation)
- Wash, chop, and shred the vegetables
Wash the vegetables, use a vegetable pepper to peel the carrots. Then, chop the onions, garlic, and bell peppers. Shred the carrots and set aside. Blend some old-fashioned oats to make oat flour.
- Sautรฉ the Vegetables
Gather all the ingredients listed under the section โfor the vegetable mixtureโ in the ingredients list for sautรฉing.
- Drain the Beans (optional step)
If youโre using canned beans, you need this step. You must drain all the water from the can before using them in the recipe. If you made my homemade black beans from scratch, skip to the next step.
- Mash the beans
Place black beans into a clean bowl and mash using a potato masher. The goal isn’t to puree the beans.
- Combine Burger Mixture
Add the sautรฉed vegetable mixture, ยฝ cup of ground oats, and egg to the mashed black beans. Using a spatula, or a clean hand combine well, and then cover foil or cling film
- Form Your Patties
Once the mixture has been chilled, mold into patties. 2 cups of black beans make about 4 to 6 patties. Double this recipe as I did (as you wish๐)
- Cook Your Black Bean Burgers
Place a pan on the stove, add oil, allow it to get hot, and gently drop the burgers to cook. Sear for 5 minutes on each side on medium heat, then transfer to finish cooking in the oven.
- Serve and Enjoy!
Serve with lettuce leaves. YUM!!! Another way I LOVE to serve this is with twice fried plantain buns and caramelized onions! And it brings the roof down!
Best Tips For Making Black Bean Veggie Burgers:
- Use home-cooked black beans (whenever possible). If possible every single time!
- Grind your own oats to make oat flour
- Add veggies for color and nutrients.
- Always sautรฉ the vegetables for maximum flavor!!
- Do not puree your black beans when mashing them. You can make them a bit smoother. However, I prefer a little more texture, so I donโt finely mash them.
- It is very important to allow your black bean burger mixture to rest in the refrigerator for 30 minutes – to 1 hour.
- Use a measuring cup to keep the patties equal and even. This will help them cook uniformly.
- Please note that the consistency of the mixture is (almost) soft; handle the patties with care as you form them
- In the cooking step, when you put the patties in the oven, you can casually place a piece of foil on top. This will keep them from drying out while giving you the perfect taste and texture.
- Do not cook your veggie burgers too long oven, they might dry out.

Variations and Substitutions
- Try serving this healthy black bean burger with a fried ripe plantain bun topped with caramelized red onions.
- Feel free to use a bread bun for a more traditional feel and use the lettuce as one of the toppings.
- There are no limits to what you can put on top, be it a fried egg or even a slice of bacon. If youโre making these for a crowd, consider having a platter of toppings that everyone can pick and choose to enjoy it their way.
BTW, thisโฌ๏ธ black bean burger on “plantain bun” was fire and caramelized!! Will make post about plantain bun.

Ingredients
- 2 cups of already-cooked black beans; use this recipe. Canned store-bought black beans work, too!
- ยฝ cup of ground oat flour
- 1 eggย
- 1 โ 2 tablespoons of olive oil (for sautรฉing/ cooking the burger)
For the vegetable Mixture:
- ยฝ – ยพ cup of chopped onions and garlicย
- 1 medium size carrot (shredded)ย
- ยฝ cup of bell peppers and green onions (chopped)
- 2 tsp – 1 TBS of olive for sautรฉing the vegetablesย
- ยผ tsp. of black pepper
- ยผ tsp. of ground red chili pepper
- ยฝ tsp. salt or as needed
- ยฝ tsp. Knorr Bouillon seasoning powder
For Serving:
- 2 โ 4 lettuce leaves (per a burger or as needed for serving)
- Avocado (optional for serving)
- Plantain Bun (if not using lettuce; my fav)
Instructions
- Wash, chop, and shred the vegetables. Wash the vegetables, use a vegetable pepper to peel the carrots. Then, chop the onions, garlic, and bell peppers. Use a hand-held shredder or food processor to shred the carrots and set aside. Blend some old-fashioned oats to make oat flour. I have never used store-bought oat flour for this recipe. I always blend/make it myself.ย
- ย Sautรฉ the Vegetables. Gather all the ingredients listed under the section โfor the vegetable mixtureโ in the ingredients list for sauteeing. Add olive oil to your pan, let it heat up, then add the onions, bell peppers, shredded carrots, and garlic. Stir and season with both types of peppers, salt, Knorr, etc. Taste and adjust flavors. Then, set aside to cool for the next step.
- Drain the Beans (optional step). If youโre using canned beans, you need this step. You must drain all the water from the can before using them in the recipe. If you made my homemade black beans from scratch, skip to the next step.ย
- Mash the beans. Place black beans into a clean bowl and mash using a potato masher. The goal isn’t to puree the beans. I personally like seeing some of the textures of the black beans.
- Combine Burger Mixture. Add the sautรฉed vegetable mixture, ยฝ cup of ground oats, and egg to the mashed black beans. Using a spatula, combine well, and then cover it with a foil or cling film. Then, place this mixture in the fridge for at least 30 minutes before the next step. This allows the mixture to firm up before forming.
- Form Your Patties. Once the mixture has been chilled, mold into patties. 2 cups of black beans make about 4 to 6 patties. The size of the patties depends on how big or small you want them. Use either 1/3 cup or 1/2 cup measure to ensure the patties are even. (Note: I doubled the recipe, as you can see).
ย
- Cook Your Black Bean Burgers. Place a pan on the stove, add oil, allow it to get hot, and gently drop the burgers to cook. Sear for 5 minutes on each side on medium heat, then transfer to a lined cookie sheet and casually place a foil over them. Bake in a preheated 350F-degree oven for 7 to 10 minutes to thoroughly cook.
- Serve and Enjoy! To serve, place 2-4 lettuce leaves as a bun on your plate, tomato slices, and sauce, if desired. Place your black bean burger on top of that, followed by avocado slices and more lettuce leaves. Enjoy! You can add to a bowl of quinoa or rice. Perfect with only tomato slices and a dollop of sauce if you don’t want to be bothered with buns. Did I mention that these black bean veggie burgers with regular bread buns are fantastic? Overall, this recipe is 10/10!
