Leave it for a minute and that should help prevent excess water from ruining things.

- Wash, peel and cut
Prep your sweet potatoes by washing and peeling them. Then, cut them into big chunks and place them into a sizeable pot.
- Cook/Boil
You’ll add water to your pot of sweet potatoes along with some fresh rosemary sprigs. Put some salt in there too, then cook on your stovetop until the sweet potatoes are fork tender. (Cooking time may differ depending on how big/small you cut the potatoes.)
- Drain
Once the sweet potatoes are done, drain out all the water. Make sure to get it all out to avoid having watery mashed sweet potatoes. You should also remove the cooked rosemary sprigs.
- Mash the Boiled Sweet Potatoes
Add the coconut milk, coconut cream, salt, and pepper to your sweet potatoes. Be mindful of how much salt you add since you initially added salt during the boiling process. Mash the potatoes until you get the right texture, adding more coconut cream if needed. Adjust the seasonings as you mash!
