  • 3 big raw sweet potatoes
  • 1/3 -1/2 cup coconut milk (add more if need be)
  • 1/4 cup of coconut cream; (plus more to drizzle/garnish after mashing; optional)
  • 1/2 teaspoon Salt (always add salt to your preference)
  • 1/4-1/2 pepper to taste (adjust as needed)


Instructions

  1. Wash, peel, and cut. Prep your sweet potatoes by washing and peeling them. Then, cut them into big chunks and place them into a sizeable pot.
  2. Cook/Boil. You’ll add water to your pot of sweet potatoes along with some fresh rosemary sprigs. Put some salt in there too, then cook on your stovetop until the sweet potatoes are fork-tender.   3. Drain. Once the sweet potatoes are done, drain out all the water. Make sure to get it all out to avoid having watery mashed sweet potatoes. You should also remove the cooked rosemary sprigs.  
  4. Mash the Boiled Sweet Potatoes. Add the coconut milk, coconut cream, salt, and pepper to your sweet potatoes. Be mindful of how much salt you add since you initially added salt during the boiling process. Mash the potatoes until you get the right texture, adding more coconut cream if needed. Adjust the seasonings as you mash! Notes

Cooking time may differ depending on how big or small you cut the potatoes.

Add more coconut cream if your mashed sweet potatoes aren’t creamy enough, but do so in small increments until you get it just right.

Make sure your vegan mashed sweet potatoes are the right consistency. In other words, add more liquid or reduce liquid as needed.

If you don’t have fresh rosemary, you can use dried rosemary from your spice rack.

Use fresh thyme if you don’t have fresh rosemary.

You may use a food processor to mash your boiled sweet potatoes if you don’t have a potato masher.
