  1. Mash the banana. For your best results, you’ll want to use an overripe banana. You can use a fork to mash it up with ease in a bowl. Mash the banana with a fork 
  2. Add the oats. Once your banana is mashed up, measure and pour in 1 ½ cups of rolled or quick oats. Stir to combine the banana and oats well. Add oats to mashed banana 
  3. Add some flavor. Now comes the fun part! Add a dash of cinnamon, a little salt, and a tablespoon of maple syrup and almond butter. You can substitute maple syrup for date syrup or Monkfruit.   6. Get Air Frying. Once you’ve added the dough, cook the granola clusters at 275F for 15 to 20 minutes. Shake/toss midway or turn with a fork. Check it at 15 minutes to see how it’s crisping up. Notes

Use an overripe banana; they easily mash and are sweeter. 

You could also use a banana that isn’t quite as ripe; ensure to mash it well! 

Use spices of choice. You can add other spices if you like. Pumpkin spice would be fun for the holiday season!

You can use rolled or quicks; sometimes, I combine quick and rolled oats when making this recipe. 

The trick is to ensure all the ingredients combine well but not smoothly. This is generally not a smooth dough. It should be thick enough to drop into clumps into the air fryer using a fork or spoon. 

Do not air fry at a high temperature; it could burn. Stay away from trying to cook it quicker at a higher temperature. 

I typically make chunky granola fresh each; they are fresher, crispier, and more enjoyable that way. Please note that I do not use bananas when making granola that I will keep for a week or two. The latest I have kept these vegan banana oat clusters is overnight. You can make this recipe with quick oats, rolled/old-fashioned oats or a mixture of both!
