When you air fry a ribeye steak, you end up with a juicy, tasty + satisfying piece of meat. Today, though, we shall be (kind of) stir frying this ribeye steak alongside zucchini in the air fryer! How awesome is that? 🙂

You will need a ribeye steak or any good steak on hand and zucchini. Zucchini is an easy-to-cook vegetable that pairs well with any protein of choice. Don’t like steak? No worries! Pair zucchini with salmon or chicken instead.

Steak and zucchini stir-fry in the air fryer guarantees you a healthy quick, and easy lunch or dinner. I made this recipe for dinner the other night for my husband and me. The best part about making ribeye steak and zucchini in the air fryer is that cleaning up is easy. Also, it keeps this recipe healthier than stir-frying it on a stovetop.

Air fried ribeye steak and zucchini meal is gluten-free, dairy-free, whole30-friendly, low-carb, and keto-friendly. Typically, I do not meal prep this recipe; I prefer freshly made each time because it takes only 20 minutes. Am sure you will find a way to include this recipe in your weekly meal plan.

CAN YOU AIR FRY A RIBEYE STEAK?

Short answer: absolutely yes, you can air fry a ribeye steak! In case you missed the memo, air fryer steak is the bomb dot com. The current cooking memo states that making steaks in the air fryer is the best way to make steaks! Air frying a ribeye steak ensures that you have a tasty, juicy, fantastic steak that is not overcooked or hard.

Personally, I can’t go back to baking steaks in the oven anymore! Is air fryer steak good? Yes! Air fryer steak is seriously finger-licking good and just the best way to cook steaks!

CAN I MAKE A STIR FRY IN THE AIR FRYER?

Yes, you can make a stir fry in the air fryer (however, it depends on the type of the air fryer). An air fryer that has a basket (like mine) can most certainly make a stir-fry. This recipe of ribeye steak and zucchini is a simple air fryer stir-fry you can try.

First, ribeye is a high-quality steak that is easy to cook. Second, zucchini is a great vegetable to pair with it. Gather all the ingredients and follow my instructions, and boom, steak dinner is ready!

AIR FRYER RIBEYE STEAK & ZUCCHINI INGREDIENTS:

  • Ribeye steak
  • Zucchini
  • Onions (optional)
  • Sesame seeds (only a handful; for garnishing) 
  • Chopped fresh parsley (for garnishing)

Ingredients to season the ribeye steak:

  • Fresh ginger (grated)
  • Garlic (grated)
  • Paprika
  • Avocado oil + avocado oil spray 
  • Dry thyme (you can use fresh)
  • Knorr bouillon or Maggi cube (sub with Cajun or Creole)
  • Black pepper
  • Salt to taste

Ingredients to season the Zucchini:

  • Paprika
  • Onion powder
  • Avocado oil + avocado oil spray 
  • Garlic powder
  • Knorr Bouillon or Maggi cube (sub with Cajun or Creole)
  • Cayenne pepper  
  • Dry thyme
  • Black pepper 
  • Salt to taste 
  • (Make sure to check the recipe card for the exact measurements of the ingredients)

HOW TO MAKE AIR FRYER RIBEYE STEAK AND ZUCCHINI MEAL (STEP-BY-STEP):

I am so excited to show you how to perfectly air fry ribeye steak! If you have never tried steak and zucchini (together) before, this is a reminder that you should. Follow the steps and make ribeye steak and zucchini in your air fryer.

  1. wash the ribeye steak and zucchini.

    Wash the ribeye steak and use a paper towel to pat it dry, wash the zucchini too. Do the same for onions (if using it). Sidebar: I do wash my steaks before cooking, but I understand if you don’t.

  2. cut the ribeye steak & zucchini.

    Slice the steak into small strips like stir-fry meat or fajitas. Cut zucchini however you want. First, cut off the (stem and blossom) ends. Next, cut in rounds while dividing in the middle. Alternatively, cut off the ends, split zucchini in the middle, and cut into desired rounds.cut zucchini and sliced steak

  3. season ribeye steak and zucchini separately.

    Use the steak and zucchini seasoning to season steak and zucchini separately. Season the steak at least 30 minutes before cooking and allow it to marinate. However, season the zucchini shortly before cooking; do not marinate the zucchini.marinated ribeye steak and zucchini

  4. air-fry ribeye steak and zucchini.

    First, set the air fryer for 14 minutes and 400 degrees; preheat. Place a parchment paper inside the air fryer basket after it’s preheated, and then add the marinated steak and zucchini; air fry between 12 – 14 minutes.An easy air fryer ribeye steak and zucchini (stir-fry) is a healthy low-carb meal you can easily make in the air fryer.   5. turn steak and zucchini midway.

    Remove the parchment paper when you turn the food midway. Also, spray avocado oil spray after turning the food (which gives it a little shine), then, finish cooking. HOW TO SERVE AIR FRYER STEAK AND ZUCCHINI MEAL:

After the steak and zucchini are ready, gently remove them from the air fryer and place them on a plate. Then, take some of the juices that collected in the drawer below the air fryer basket and sprinkle them right back on the food. YUM!

Uniquely, this juice makes a great sauce and adds juiciness to this air fryer ribeye steak and zucchini.  This sauce mimics the sauce from stir fry and it is necessary if you wish to serve this ribeye steak and zucchini with rice, quinoa, or potatoes. Additionally, it keeps this dish moist and juicy!

Finally, sprinkle a handful of sesame seeds (for garnishing) as well as some fresh parsley; (these are optional).

NOTES/TIPS:  

  1. Whether or not to wash steaks before cooking? I do wash mine. However, do what works for you!
  2. Ensure to slice or cut all the steak equally for even cooking.
  3. Bring steak to room temperature before you cook.
  4. Do not skip fresh ginger & garlic (it excellently brings out the taste of the ribeye)!
  5. I like cutting the zucchini a little chunky, that way, it stays crunchy! 
  6. Use any seasoning of choice. If you don’t have the ones I listed; fajita seasoning will do.
  7. This recipe serves 1 – 2 people; if you wish to eat it as is without rice, you can have it all – eat it all! It’s only 440 calories. However, if you want to serve it with rice or quinoa, it will serve two people.
  8. Add salt and pepper to taste (am sure you already know?)😁
  9. Season steak and zucchini separately. Possibly, allow the meat to marinate; however, use the zucchini asap. Typically, season the ribeye for at least 30 minutes before cooking. On the other hand, season the zucchini just before adding everything to the air fryer. Unfortunately, if you season the zucchini ahead, it will start losing moisture and wilting. I want a firm, crunchy zucchini, not a wilted zucchini.
  10. Remember, thinly sliced steaks cook so quickly! If you cut zucchini the same way as the ribeye steak am sure it will cook quicker and might be ready in 10 minutes! I cooked mine for almost 14 minutes because I wanted the zucchini to cook more as they were bigger.
  11. If you wish to cook a medium-rare steak, I highly suggest you start air frying the zucchini first and then add the steak later. 
  12. This is my air fryer; love it!

VARIATIONS/SUBSTITUTIONS:  

Low-carb: first of all, air-fried steak and zucchini make a perfect low-carb meal. Typically, my suggestion would be to serve it as a meal if you wish to keep it keto/low-carb. That is, simply enjoy as is.

Serve on carbohydrate: you can easily serve this air fryer ribeye steak and zucchini as a stir-fry. In other words, serve it with some rice or quinoa for a fuller + satisfying meal! This recipe will give you two servings if you wish to serve it with carbs. Trust me, this steak and zucchini pairs very well with white rice.

Use a different Vegetable: Don’t sweat over it if you don’t like zucchini. You should (absolutely) use any other vegetable of choice. Steak goes well with potatoes or mushrooms as well.

Use a steak or fajita seasoning: Air frying a ribeye steak is easier than you think. The best part is that you can use any seasoning, herbs, or spices. Steak or fajita seasoning would work just fine. For this recipe, I kept it simple and used pantry ingredients to season both of them. 

Knorr Bouillon/Maggi Cubes: You can swap Knorr powder or Maggi cubes with Cajun or creole seasoning. I personally prefer Knorr or Maggi because they add a distinct taste.

  • ¼½ bulb of onions (optional)
