  • 7 oz or 8 oz ribeye steak (mine was 7 oz)
  • 1 big/large zucchini
  • ¼½ bulb of onions (optional)
  • Sesame seeds (only a handful; for garnishing; optional) 
  • 1 TBS. chopped fresh parsley (for garnishing; optional)

Instructions

  1. Step one; wash the ribeye steak and zucchini. Wash the ribeye steak and use a paper towel to pat it dry. Wash the zucchini too. Do the same for onions if using it. Sidebar: I do wash my steaks before cooking, but I understand if you don’t. 
  2. Step two; cut the ribeye steak & zucchini. Slice the steak into small strips like stir-fry meat or fajitas. Cut zucchini however you want. First, cut off the (stem and blossom) ends. Next, cut in rounds while dividing in the middle. Alternatively, cut off the ends, split zucchini in the middle, and cut into desired rounds. cut zucchini and sliced steak
  3. Step three; season ribeye steak and zucchini. Use the steak and zucchini seasoning to season steak and zucchini separately. Season the steak at least 30 minutes before cooking and allow it to marinate. However, season the zucchini shortly before cooking; do not marinate the zucchini. marinated ribeye steak and zucchini
  4. Step four; air-fry ribeye steak and zucchini. First, set the air fryer for 14 minutes and 400 degrees; preheat. Place a parchment paper inside the air fryer basket after it’s preheated, and then add the marinated steak and zucchini; air fry between 12 – 14 minutes.   5. Step fiveturn steak and zucchini midway. Remove the parchment paper when you turn the food midway. Also, spray avocado oil spray after turning the food (which gives it a little shine), then, finish cooking. Taste and adjust flavor (if needed) towards the end of the cooking time! Notes

Whether or not to wash steaks before cooking? I do wash mine. However, do what works for you!

Ensure to slice or cut all the steak equally for even cooking.

Bring steak to room temperature before you cook.

Do not skip fresh ginger & garlic (it excellently brings out the taste of the ribeye)!

I like cutting the zucchini a little chunky, that way, it stays crunchy! 

Use any seasoning of choice. If you don’t have the ones I listed; fajita seasoning will do.

This recipe serves 1 – 2 people; if you wish to eat it as is without rice, you can have it all – eat it all! It’s only 492 calories. However, if you want to serve it with rice or quinoa, it will serve two people.

Add salt and pepper to taste (am sure you already know?) 

Season steak and zucchini separately. 

Remember, thinly sliced steaks cook so quickly! If you cut zucchini the same way as the ribeye steak am sure it will cook quicker and might be ready in 10 minutes or less! I cooked mine for almost 14 minutes because I wanted the zucchini to cook more as they were bigger.

If you wish to cook a medium-rare steak, I highly suggest you start air frying the zucchini first and then add the steak later.
