I Love to Cook.

It is no longer news that I love cooking for my family, especially during the holidays. Some of my holiday favorites include oven-baked whole turkey, cauliflower mac and cheese, baked brussels sprouts, healthy cornbread, Nigerian fried rice, Nigerian party Jollof rice, etc.! I personally enjoy making turkey during Thanksgiving or Christmas; however, I prefer stuffed turkey breast when I don’t have enough time or feel like keeping it simple.

I made this stuffed turkey breast December 25, 2020, and it served all four of us. And we had a little leftover! Listen to me, save yourself the hassle of trying to make a whole turkey. Make this one turkey breast instead! It is an easy and classy alternative to roasting a whole turkey. Also, you don’t need to be an expert to know how to cut/carve it. Finally, and perhaps most importantly, it can serve up to 6 people!

Can I Make this Recipe with a Bone-in Turkey Breast?

This recipe calls for a boneless turkey breast because we will stuff it (with spinach, potatoes, peppers, apples, and all the good things.) I kept the stuffing gluten-free. What if I can’t find boneless turkey breasts? Can I make this recipe with a bone-in turkey breast? Sadly, you can’t make this recipe with a bone-in turkey breast. This is a stuffed turkey breast recipe, and you cannot stuff a turkey breast while the bone is in.

On the other hand, if all you see in the store is bone-in turkey breast, ask the butcher to debone it for you. Or you can debone it yourself; I actually deboned this one! Simply cut along the bone line to remove it. The bottom line is to make sure that you use a boneless breast for this stuffed turkey breast recipe.

Do you need to Brine a Turkey Breast?

Yes, you should absolutely brine the turkey breast. I brined my turkey breast to ensure every part of this breast was well seasoned, moist, and flavorful. Though this is optional, I highly recommend it! Brining makes the meat juicier; sadly, turkey breast can be dry. I brined this meat for only 5 hours. You can brine it longer or do it overnight if you have the time.

Ingredients to Brine the Turkey Breast:

  • Water (as needed)
  • Salt
  • Dried rosemary
  • Few cloves (optional) 

How to Brine a Turkey Breast:

  • Add a good amount of water to a big bowl
  • Then add a generous amount of salt
  • Add the rosemary, cloves, and stir the bowl
  • Immerse the turkey breast in the water, make sure the water covers the entire meat. Then use a piece of foil to cover very well, and place the brine in the fridge for a couple of hours or overnight. Five hours was good enough for me.

How to Butterfly a Turkey Breast:

In order to make this stuffed turkey breast recipe, you will need to butterfly the turkey breast. What does it mean to butterfly a turkey breast? Butterflying is a technique used to make a narrow piece of meat broader by gently slicing it in the middle without entirely cutting it through. This way, it opens up like a “butterfly” or wing. The technique for butterflying chicken or turkey breast is the same. Here’s how to easily butterfly a turkey or chicken breast.

  • Place breast on a clean solid surface; place one hand on the meat to secure it.
  • Using a sharp knife, start from the thicker round side of the meat 
  • Gently cut using a sawing motion and stop at approximately one inch to the other side. Be careful not to cut the meat through!
  • Look for already butterflied turkey breast, or ask your butcher for help if you don’t feel comfortable doing it yourself.

Let’s talk Stuffing:

Ok, healthy foodie friends, one of the things I love about making this healthy stuffed turkey breast is the stuffing! Above all, I like to keep the stuffing gluten-free; yes, you heard me. I usually refrain from using the traditional store bought (bread-like) type of stuffing. Fortunately, veggies are fantastic for this same purpose, perhaps even better. Always include the veggies you like and tailor them to suit you. Feel free to keep the stuffing keto/low-carb (or however you wish).

Ingredients for Stuffing this Turkey Breast:

  • Half boiled + chopped potatoes
  • Fresh spinach
  • Bell peppers (chopped)
  • Chopped apples
  • Onions and garlic (chopped)
  • Bacon
  • Egg white
  • Parmesan cheese
  • Crushed red pepper
  • Black pepper
  • Salt to taste
  • Maggi

How to make gluten-free stuffing

HOW TO MAKE STUFFED TURKEY BREAST (Pls watch the video):

  1. Preheat oven to 325 
  2. Gently remove turkey breast from the brine. Use a paper towel to pat dry the meat.
  3. Butterfly the turkey breast (follow the earlier instructions on how to butterfly a turkey breast)
  4. Use the meat pounder tool to flatten the turkey breast. Then ensure the meat is spread out; sprinkle a little salt, black pepper, a dash of bouillon, and olive oil.
  5. Prepare the stuffing following my instructions on “how make the gluten-free stuffing.”
  6. Place all the stuffing in the side (not the middle) of the turkey breast. Lift that side and roll; ensure to cover the filling is rolled in and covered by the meat.
  7. Use the butcher’s twine to secure the meat by tying it across and knotting securely.
  8. Sprinkle small salt, pepper, bouillon powder, and olive oil on the tied-up meat.
  9. Place the turkey breast into a baking sheet, skin side up, and bake uncovered until the internal temperature registers 175 in the middle/thickest part.
  10. Allow stuffed turkey breast to rest for 10 – 15 minutes before cutting and serving.
  11. Sprinkle some gravy or my green cashew spinach sauce.

How many People does this Recipe Serve?

First of all, turkey comes in different sizes, and so are turkey breasts! This breast was about 3 pounds, and it served the 4 of us, and we had a little leftover. Approximately this recipe serves 4 – 6 people. We can just say five to be on the safe side.

Can I make this ahead?

Yes, I believe you can make this ahead and reheat it when you wish to use it. Alternatively, you can make it halfway, freeze and then bake when you want to use it. Usually, I make it and use it on the same day because it is far easier than a regular whole turkey. To save time, make the stuffing ahead and freeze. Then on the day, you plan to make the recipe, thaw it and use it. 

How long should I cook Turkey Breast?

The safe temperature for cooking a stuffed turkey breast is different from the one that wasn’t stuffed. I cooked this stuffed turkey breast for about 1½ hours (uncovered until the internal temperature registers 175 in the middle/thickest part.) The standard for cooking turkey depends typically on temperature and size.

What can I stuff in stuffed turkey breast?

There are many things to stuff into the turkey or chicken. Primarily, most people use bread-like stuffing, aka dressing. On the other hand, I love using varieties of veggies. My keyword is always to sauté and season them before using (as seen in this baked stuffed turkey breast.) First, I sautéed all the veggies individually. Then I combined them with parmesan, bacon, and I stuffed them in the turkey breast.

Pro tips for Making the Best Stuffed Turkey Breast for the Holidays!

  1. Use a boneless turkey breast.
  2. Brine the Turkey Breast (no one like unseasoned meat)!
  3. Prepare the stuffing ahead of time. Sometimes, making the stuffing might take plenty of time, depending on what you wish to use. However, if you are stuffing with, say, cheese, it definitely wouldn’t take any time.
  4. Make sure to have butcher’s twine to hold the meat together; I wouldn’t recommend making this recipe without a twine. You can try securing it with toothpicks (good luck with that)!
  5. Bake uncovered and skin up.
  6. Make fresh + exciting gravy. For instance, my green spinach & cashew gravy adds a touch great color!
  7. Make amazing sides to up lift your stuffed turkey breast. I like fried rice, cauliflower mac and cheese and Brussels Sprouts!

Ingredients

Scale
  • 1 (2½ – 3 pounds) of fresh turkey breast
  • ¼ EVOO (Olive oil) or Butter
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon of bouillon  

Ingredients for brining:

  • 6 cups of water (or more as needed)
  • ¼ cups of Salt
  • 1 teaspoon of dried rosemary
  • Few cloves (optional) 

Ingredients for the stuffing:

  • 1 cup of  half boiled chopped potatoes
  • 3 cups of fresh spinach
  • ½ cup of chopped bell peppers
  • ½ cup of chopped apples
  • ½ cup of chopped onions and garlic
  • 2 bacons
  • 1 egg white
  • 1/3 cup of parmesan cheese
  • 1 teaspoon crushed red pepper
  • ½ teaspoon black pepper
  • Salt to taste
  • ½1 Maggi

Instructions

How to Make my Gluten-free Stuffing for this Stuffed Turkey Breast

  1. Cut the fully cooked bacon into tiny bits, and set aside.
  2. Wash and cut/chop all the vegetables as needed
  3. Parboil the potato, cut/chop into tiny bits, and set aside
  4. In a clean pan, add olive oil, and allow to heat up. Sauté the onions, garlic, add a little salt, and scoop out and set aside.
  5. Then sauté the bell peppers also sprinkle a little salt, sauté for a few minutes, scoop out, and set aside.
  6. Sprinkle a little oil on the same pan (if need be), add the potatoes, season with a bit of salt and Maggi. Sauté and scoop out; set aside.
  7. Sauté the apples, and set aside as well. (Make sure to check out the video instruction)
  8. Sprinkle some oil if need be and finally sauté the spinach; add a little salt and Maggi. Place wilted spinach on a paper towel-lined plate. This way, the paper towel absorbs the liquid.
  9. Add all the sautéed stuffing to a clean bowl, starting with potato, bell peppers, apples, onions and garlic, bacon, spinach, and mix. Use a potato masher to break it down a little. Then add the cheese and egg white; mix.
  10. Finally, use a potato masher to mash together. Set aside to use when needed to stuff the turkey breast.

This recipe is low-carb; you can make it keto by eliminating the apples and potato

I intentionally didn’t use sugar in my brine; you can add the same quantity as salt if you wish to use it.

Though I sauteed the stuffing ingredients individually, you can choose to sauté together. It will still work out!
