WHAT IS SHAWARMA SEASONING MADE OF? 

Shawarma seasoning comprises cumin, curry, turmeric, cinnamon, oregano, paprika, black pepper, olive oil, lemon, and salt. Also, nutmeg, clove, ginger, and cayenne pepper are equally part of the shawarma spices. Whenever you think of shawarma seasoning, think of warm Middle Eastern flavors.   • 3 medium-size potatoes 

Shawarma Spices Ingredients:

HOW TO MAKE AIR FRYER CHICKEN LEG QUARTERS AND POTATOES WITH SHAWARMA SPICES (step-by-step):

  1. gather the ingredients.

    Get all the ingredients together – chicken leg quarters, potatoes, and shawarma spices. Then clean the chicken and peel the potatoes.

    Place the clean chicken leg quarters in a big bowl, sprinkle oil, and rub in with your hands. Then sprinkle the shawarma spice mix and lemon juice; combine well with your hands. Ensure the shawarma marinade gets into every part of the chicken. Set aside to marinate or cook asap.season the chicken

  3. season the potatoes

  6. check for doneness

    My chicken was ready at exactly 27 minutes. Typically, the exact time it takes to cook chicken leg quarters depends on the size of the quarters. If you have small-sized chicken leg quarters, you may check for doneness after 25 minutes of cooking. Insert a meat thermometer to the thickest part of the chicken for accuracy.   2. Season every part of the chicken with the shawarma marinade. Use hands to massage the meat very well.
  3. Usually, the shawarma marinade requires a lot of oil. However, I intentionally used less oil in the recipe. Feel free to add more oil if you wish.
  4. It is absolutely okay not to peel the potatoes. Relatively, you can decide to season the potatoes with only salt and pepper. 
  5. Remember that the potatoes cook quicker than the chicken. Remove them instead of burning them. BTW, you may be tempted to eat them all before serving!
  6. Use the meat thermometer to check for the doneness of the chicken leg quarter. The chicken leg quarters may not exactly cook simultaneously, especially if they have different sizes.

STORAGE AND REHEATING:

Fortunately, you can store the leftover of these air fryer shawarma chicken leg quarters in the fridge for up 4 days. This recipe is perfect for meal prep! Relatively, ensure to allow them to cool completely before storage. 

On the other hand, you can freeze chicken leftovers for up to 6 weeks. However, I do not recommend freezing the potatoes.

  2. Step two: season the chicken. Place the clean chicken leg quarters in a big bowl, sprinkle oil, and rub in with your hands. Then sprinkle the shawarma spice mix and lemon juice; combine well with your hands. Ensure the shawarma marinade gets into every part of the chicken. Set aside to marinate or cook asap.

    1. Thanks for stopping by, Christina!
      I believe you can make this in the oven using a sheet pan, and if you desire for the quarters to be crispy like this one, I also suggest placing them on a rack. Also, remember to turn at least one time.
      As per the convection, just place them there and cook as you would the basket. Hope this helps.

  7. This was to die for! I made 2 changes. 1) didn’t have Maggi, so added a bit more salt as recipe suggested 2) cut my potato in larger wedges so I didn’t have to worry about overcooking. Husband said “this recipe is a keeper”
