How to Make Pineapple Iced Tea from Scratch Without Refined Sugar (Step-by-Step):
Once you make this fresh pineapple iced tea from scratch, there is no going back to overprocessed store-bought stuff. These steps will help you make the most refreshing drink of the summer!
- Boil Water and Brew Your Tea
Since you need freshly brewed black tea for this iced tea, start off by adding water to your pan and bringing it to a boil. Steep the teabags for 3-5 minutes in the boiled water, then remove the teabags and discard. Add the hot tea to a big bowl if not in one already.
- Prep the Pineapple
First, wash your pineapple very well and pat dry with paper towels. Then, peel the pineapple and dice them up. Cutting into small chunks works, too!
- Combine Tea, Pineapple, and Monk Fruit Sweetener
Gently add your pineapple pieces and monk fruit sweetener to that same bowl with the tea. Use a hand-held potato masher to break down the diced pineapple into the tea, mashing carefully to avoid splashes of the hot liquid. (I typically allow the tea to cool a bit before this step). Hot splashes are real! Please do not blend, process or puree. You don’t want a cloudy/soupy tea!!!
- Strain
After mashing the pineapple, place a sieve or colander over a big container or bowl to strain. Ensure to extract all the liquid. Feel free to use a cheesecloth if needed.
- Chill
Pour this tea into a jug or a container big enough to can contain it, and place it in the refrigerator to cool.
- Serve
After cooling and when ready to serve, add some ice into your cup and pour cooled fresh pineapple tea over it. Garnish with fresh mint if you wish, and enjoy!
Recipe Notes and Tips!
- Make sure to use a big, ripe, juicy pineapple!
- No Monk fruit? You can use white cane sugar (if that’s fine)!
- I highly suggest not using a blender for this job because it may look like soup, which you don’t want!
- Mash hard to get all the juice out of the pineapple (it’s an excellent hand workout)
- It is better to allow the tea to cool a bit before adding the chopped pineapple chucks and Monk fruit to mash.
- Watch out as you mash because you can get splashed with water.
- Ensure that you sieve this very well to get a clear pineapple tea.
- You can dilute your pineapple tea with water if it is too syrupy or if you think it’s necessary. But this recipe made about 9 cups of pineapple tea.
- Only add ice cubes when you are ready to serve!

How to Store Fresh Pineapple Iced Tea Leftovers:
Pineapple iced tea technically can last in your fridge for up to 10 days. Though I have never kept it that long. Usually, we finish it within 72 hours. My kids love this fruit tea, and it’s their favorite out of all the fruit teas I make, so it’s usually gone within a couple of days. I assure you that you will likely drink it all up in no time as we did.
Variations and Substitutions
- If you can’t find a whole fresh pineapple, check your produce section for freshly cut chunks of pineapple. Do not use canned pineapple or store-bought pineapple juice though!
- Feel free to experiment with different herbs for the garnish. You can try basil, lemongrass, rosemary, ginger, or cilantro. Keep in mind it will change the flavors a bit, so try it with the mint first.
- If you don’t have monk fruit sweetener, you can use white cane sugar (if you are fine with it). Alternatively, a different type of natural sweetener can also work as a substitute for Monk fruit. Be mindful that sweeteners with strong colors, such as coconut sugar, maple syrup, etc, may likely change the color of your pineapple tea.
- Add ginger and lemon for a healthy kick and more flavors!
