What Is Peri Peri Chicken?

Peri peri chicken is a flavorful dish typically seasoned or marinated with peri peri sauce before cooking. The sauce is traditionally made with African bird’s eye peppers, fresh vegetables, herbs, and spices. It gives the chicken its signature smoky, tangy, and spicy flavor.

Today, however, I’m making this authentic African peri peri chicken a little differently. Instead of marinating the chicken in peri peri sauce, I first season and brown the chicken, then gently simmer it in the sauce until tender. The result is juicy, flavor-packed chicken thighs coated in a rich, smoky peri peri sauce that you’ll want to spoon over everything.

Although peri peri chicken is enjoyed around the world, its roots trace back to Africa. That was where the famous bird’s eye pepper originated. Every region and family has its own version. But one thing remains the same, peri peri chicken is all about bold, unforgettable flavor.

  3. Allow to Marinate or Cook ASAP

Cover and refrigerate for up to 2 hours if time allows. You can also cook the chicken immediately. Both methods produce delicious results.

  4. Brown the Chicken

Heat the olive oil in a large skillet or Dutch oven over medium heat. Arrange the chicken thighs in a single layer, skin-side down. Cook for 5 to 7 minutes, or until the skin is golden brown. 6. Simmer Until Tender

Simmer the chicken for 18 to 20 minutes, stirring occasionally to prevent the sauce from sticking. Cook until the chicken reaches an internal temperature of 165°F (74°C). As it simmers, the sauce will thicken slightly and beautifully coat every piece of chicken.Looking for a bold and flavorful chicken dinner? Cooking Note/Expert Tips

  • Pat the chicken completely dry before seasoning for the best browning.
  • Marinating for 2 hours develops even more flavor.
  • Brown the chicken before adding the sauce. This creates a richer flavor.
  • Reduce the heat once you add the peri peri sauce. Gentle simmering keeps the chicken tender.
  • Taste the sauce before serving. Add more salt or peri peri pepper if needed.
  • Homemade peri peri sauce delivers the freshest flavor, but a good-quality store-bought version also works.

Peri peri Chicken Variations

Make It Extra Spicy. Love heat? Add more African bird’s eye pepper or an extra habanero to your homemade peri peri sauce. You can also stir a little extra sauce into the pan during the last few minutes of cooking.

Make It Milder. Reduce the amount of bird’s eye pepper and use smoked paprika instead of hot paprika. You’ll still enjoy plenty of smoky flavor with less heat.

Use Chicken Drumsticks or quarters. Chicken drumsticks work beautifully in this recipe. Brown them the same way, then simmer until they reach an internal temperature of 165°F.

Use Boneless Chicken. Boneless chicken thighs or chicken breasts cook faster than bone-in thighs. Reduce the simmering time and avoid overcooking to keep the meat juicy.

Make It Ahead. Season the chicken and refrigerate it for up to 24 hours before cooking. The extra marinating time gives the chicken even more flavor.

What to Serve with Authentic African Peri Peri Chicken

One of the best things about this authentic African peri peri chicken recipe is how versatile it is. The bold, smoky sauce pairs well with everything from rice and potatoes to vegetables and traditional African sides. Here are some of my favorite serving ideas:

  • Basmati White Coconut Rice. Simple basmati rice allows the rich peri peri sauce to shine. Spoon plenty of extra sauce over the rice before serving.
  • Nigerian Coconut Rice. The creamy coconut flavor balances the heat beautifully. This is one of my favorite pairings for family dinners.
  • Roasted or Mashed Potatoes. Whole baked potatoes, roasted potatoes, or creamy mashed potatoes all soak up the delicious sauce.
  • Roasted Vegetables. Serve with roasted broccoli, green beans, asparagus, Brussels sprouts, or mixed vegetables for a balanced meal.
  • Fresh Salad. A crisp green salad with cucumbers, tomatoes, and a light vinaigrette provides a refreshing contrast to the spicy chicken.
  • Fufu. If you’re looking for a traditional African meal, serve this stewed peri peri chicken alongside fufu. The combination is hearty, comforting, and incredibly satisfying.
Here's a super easy way to make the fluffiest and most fragrant basmati coconut white rice. This recipe requires only a few ingredients - raw basmati rice, coconut milk, coconut oil, bay leaves, salt and pepper. You can serve this simple coconut rice in any sauce of choice, including tomato stew, goat curry, shrimp curry, salmon coconut sauce, etc. A simple recipe of basmati white rice cooked in coconut milk is the best side dish as it compliments every main!

Authentic African Peri Peri Chicken FAQs:

Can I use store-bought peri peri sauce?

Yes. Homemade peri peri sauce delivers the freshest flavor, but a good-quality store-bought version works well when you’re short on time.

Can I marinate the chicken overnight?

Absolutely. Marinating overnight allows the spices to penetrate the chicken even more, resulting in deeper flavor.

Can I freeze peri peri chicken?

Yes. Allow the chicken to cool completely, then freeze it in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.

How spicy is peri peri chicken?

This recipe has a medium to hot spice level. You can easily adjust the heat by increasing or decreasing the African bird’s eye pepper and habanero peppers.

What is the best chicken to use?

Bone-in, skin-on chicken thighs are my favorite because they stay juicy and flavorful. However, drumsticks, quarters, chicken breasts, and boneless thighs also work well.

Can I make this recipe in the oven?

Yes. Brown the chicken on the stovetop first to develop flavor. Then transfer it with the sauce to a 400°F oven until the chicken reaches an internal temperature of 165°F.

Can I make peri peri chicken in the air fryer?

Yes. Air fry the seasoned chicken until almost cooked through. Then toss it in warm peri peri sauce before serving, or brush the sauce on during the last few minutes of cooking to prevent it from burning.

How do I know when the chicken is done?

The safest way is to use an instant-read thermometer. The thickest part of the chicken should register 165°F (74°C). The juices should also run clear.
