Easy, tasty, healthy homemade pomegranate salad dressing recipe, aka pomegranate vinaigrette, will effortlessly elevate your salads! This salad dressing recipe is easy to make and uses only a few ingredients available all year round. Pomegranate salad dressing is perfect for all your salads, including holidays or festive salads! Making this simple, refreshing, homemade pomegranate dressing in your blender only takes a few minutes. Also, pomegranate vinaigrette is vegan and gluten-free!
Ingredients
- 3/4 cups pomegranate seeds made 1/4 cup pomegranate juice. (See how to cut/de-seed a pomegranate)
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons maple syrup
- 1 teaspoon monk fruit sweetener
- 1/2 Salt and
- 1/4 pepper to taste
Instructions
- Make Pomegranate Juice from pomegranate seeds. Skip this step if using store-bought pomegranate juice. First, I assume you know how to cut open/seed a pomegranate. If not, use this recipe. Second, pulse your blender several times to blend the pomegranate seeds, then strain them to get just the juice. You want to keep the seeds out of this strained juice. And do not add water! Afterward, rinse your blender and set aside for the next step. Note: You can also use store-bought pomegranate juice if you prefer. If you decide to do it that way, buy 100% pure pomegranate juice without any added sweeteners.
- Add Ingredients to the Blender. Add the pomegranate juice, Dijon mustard, maple syrup, and lemon juice. Basically, everything except your olive oil. Blend.
- Add olive oil. While blending the dressing together, you’ll slowly add the olive oil to help it emulsify.
- Taste and Adjust Flavors. Once everything is well-combined, taste it and adjust the seasonings according to your preferences. You can then put it in your mason jar until you’re ready to serve it, or go ahead and dress your salad, then serve!

Refrain from adding water to pomegranate seeds when you make the juice. However, You may add one tablespoon of water while juicing to help extract all the juice.

Add monk fruit sweetener and maple syrup to your preference. You can substitute them with honey, agave, and any other sweetener.
