  • 4 Chicken breasts (sliced into halves)
  • 1 cup Heavy cream
  • 1 &1/2 cups Chicken broth or water (I have used both broth or water. I actually prefer water)
  • 1 cup cut fresh tomatoes
  • 4 garlic cloves (grated or diced)
  • 1/2 cup parmesan
  • 3 TBS olive oil or more as needed
  • 1 teaspoon Knorr chicken bouillon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes/crushed red pepper(or as needed)
  • 1/2 teaspoon dry thyme (optional)

Ingredients for Drenching and Seasoning the Chicken (for Browning):

  • 1/2 cup flour
  • 1 teaspoon Knorr
  • 1 teaspoon salt
  • 1/2 black Pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Prep the Vegetables. Clean and grate the garlic (please use fresh garlic for maximum taste). Wash and cut the tomatoes into big chunks. Ignore this tomato part if using sundried tomatoes. Set aside. 
  2. Clean/prep the chicken. Wash and clean your chicken as needed (skip this step if you don’t wash your chicken). Pat dry your chicken with a paper towel to ensure it isn’t wet.   3. Drench the chicken. Add the flour, Knorr bouillon seasoning powder, onion powder, garlic powder, salt, and pepper into a big shallow bowl and combine. Remember these are the ingredients for seasoning/drenching the chicken). Lightly drench the chicken breasts in the seasoned flour combo and place them on a platter/tray. Then add the seasoned chicken breast and cook for 3 – 5 minutes on each side to slightly brown it. Stir in the heavy cream, then crushed red peppers, black pepper, dry thyme, and Knorr seasoning. Stir together. Then, gently stir in the parmesan by stirring consistently while adding it. Taste and adjust the flavor of the sauce, and then add the chicken back into the pot. Ensure the chicken immerses into the sauce, cover, and cook on medium-low, until fully cooked. Or until the thickest part reaches the internal temperature of 165. Taste for flavors and garnish with fresh basil. Notes

Use good quality chicken breasts. Choose organic, free-range chicken if possible.

You can pound the chicken breasts. This will help them stay even and cook quicker.

Ensure to use an accommodating pan. Let me explain: Using a pan or pot that can hold all the meat is essential.

Make sure to overcook the chicken. If you are unsure when your chicken is ready, use a food thermometer. Insert it into the thickest part of the chicken breast, and if it reads 165°F (74°C), your Chicken is ready.

Use fresh garlic; storebought minced garlic will not cut it. I personally like keeping the spices/herbs a bit minimal for this recipe because I want the luxurious flavors of the heavy cream, parmesan, and garlic to shine with the chicken.

Serve warm with a simple side dish, such as roasted vegetables, mashed potatoes, or a green salad.

Don’t have sun-dried tomatoes or don’t like them? Don’t stress. I always use fresh tomatoes, and they always come out so good!

I used homemade chicken broth, but you can use store-bought chicken broth if that’s what you have!

This recipe makes 6-8 servings, especially when served with a side dish! Remember that the breasts were sliced into halves.
