Description
A cozy, warm, inviting pumpkin breakfast, these homemade pumpkin spice waffles check all the boxes. Easy, fluffy, cozy and nutritious! This easy recipe of pumpkin spice waffles combines all-purpose flour, almond flour, pumpkin puree, yogurt, pumpkin spices, and the extraordinary New Hampshire maple syrup. To keep it healthier, I chose the original maple syrup instead of sugar in this healthy pumpkin waffle recipe. These pumpkin spice waffles are healthy because they are made with wholesome fall ingredients.
Ingredients
- 2 ½ cups of All-purpose flour
- 1 cup almond flour
- 1 cup pumpkin purée (homemade or canned)
- 1 cup milk
- 1 cup of yogurt
- 3 eggs
- 1 teaspoon vanilla extract
- ¼ cup of maple syrup
- ¼ cup of salted butter
- 2 teaspoons of baking powder
- 1 tablespoon of baking soda
- 1 teaspoon pumpkin spice
- ½ of salt
- ¼ cinnamon
- ½ teaspoon freshly ground nutmeg
Instructions
- Gather all the ingredients. It is essential to have everything you need for the recipe.
- Combine the Wet Ingredients. Add all the wet ingredients (pumpkin puree, milk, yogurt, eggs, maple syrup, butter, and vanilla extract) into a bowl, then use a whisk to combine. Set aside.
- Mix the Dry Ingredients. Add all the dry ingredients (all-purpose flour, almond flour, baking powder, baking soda, pumpkin spice, salt, cinnamon, and freshly grated nutmeg) into a bowl. Then, use a fork, mix, and set aside.
- Combine the Wet and Dry Ingredients. Take the dry ingredients and add them to the wet ingredients. Use a spatula to mix. However, do not over-mix this batter!
- Preheat Waffle Maker/Iron: Ensure your waffle maker is connected/plugged to power and preheated. The indicator light should be green.
- Cook your Pumpkin Waffles using a Waffle Maker. Grease your waffle maker or slightly spray using oil spray. Using a scoop/ladle, add batter to the waffle maker and close it. The indicator light will show red after adding the batter and closing. These instructions pertain to how I typically use my Belgian waffle maker. Please ensure to follow your waffle iron’s manufacturer’s directions.

- Cook to Doneness and Enjoy! Allow your pumpkin spiced waffles to cook until done. The indicator light should immediately turn green when it’s ready. Immediately remove and place on the cooling rack to cool.
Notes
Do not over-mix the batter.
The batter may seem “thick,” please do not panic and add unnecessary excess liquid. Make the first batch and taste before deciding if you want a more loose batter.
You will need the baking powder and baking soda for fluffy, light pumpkin waffles.
Follow your waffle maker’s direction when cooking your waffle. I have/use the Belgian waffle maker.
Allow your waffles to cool completely before storing.
If you use unsalted butter, you may need to add more salt to this recipe.
Waffle irons/makers usually have a light sensor that helps to determine when the batter is cooked. The light will be red when your batter is raw and green when ready.
Please note that your waffle iron will ultimately determine the number of waffles you make with this batter.
Work in batches until you cook all your waffle batter.
Pack leftover/cooled waffles in a ziplock bag, label them, and freeze them for up to 90 days.
