Description
Eggs, sweet potatoes, turkey sausage, bell peppers, and onions are some ingredients needed to make this healthy + nutritious baked eggs sweet potato casserole. The result is the perfect warm breakfast to kick-start your day! This simple breakfast is an ideal make-ahead recipe for quick, on-the-go mornings as well as during the holidays.
Ingredients
- 12 eggs
- 16 oz (453 grams) Turkey Sausage
- 1 big Sweet potato (air-fried, baked, or sauteed)
- 1 big red bell pepper (chopped)
- 1 big Onion/1 cup (chopped)
- ¼ cup cheddar
- 2 Bacon (diced)
- ½ – 3/4 cup of whole milk (I used 3/4 cup milk)
To season the eggs:
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon knorr
- ½ teaspoon black pepper

- Big (9×13) baking dish (I used the Pioneer Woman brand baking dish)
- Whisk
- Spatula
Instructions
- Gather the Ingredients. Before you begin, take a moment to get everything gathered and ready. This prevents wasted time scurrying around the kitchen trying to find each item you need in each step.
- Cook the Sausage. Start cooking your turkey sausage on the stovetop. Make sure it is fully cooked, then set aside.
- Prep the Sweet Potatoes. Peel and cut your sweet potato into small cubes. Keep them around the same size so they all cook evenly. You’ll season these cubes with salt, pepper, and a little oil before cooking them in your air fryer.
- Prep Your Other Veggies. Next, you’ll wash your vegetables. Dice up the onions, bell peppers, and garlic, then sauté them together in a tablespoon of olive oil. Season with just a dash of salt, then set them aside to cool when they’ve finished cooking.
- Prep the Bacon. If using bacon, this is when you will cook it and then dice it up.
- Preheat Your Oven. While the ingredients cool, preheat your oven to 350F.
- Combine the Ingredients. Place the sausage, sweet potatoes, and veggies into a big (9X13) baking dish. Then, mix/combine them with your spatula. You’ll take a separate bowl and break your eggs into them. Add seasoning ingredients to your eggs along with milk, and whisk them together. Then, pour this seasoned egg mixture into your baking dish. Top with the diced cooked bacon and cheddar cheese.
- Bake Your Eggs/Sweet Potato Casserole. Place your breakfast casserole in the preheated oven and bake for 40 – 45 minutes or until fully cooked and not runny. Cool for at least 10 minutes before serving. Garnish with spring onions, if desired.
Notes
This is such a perfect breakfast to make ahead during the holidays. Simply cut in squares and store in the freezer for when needed.
You can use my air fryer cubed sweet potato recipe to cook the sweet potatoes, as I did. Alternatively, sauté them on your stovetop, or bake them if you’d prefer.
To save time, cook the bacon and sausage prior.
Remember to assemble the casserole only when the sausage, potatoes, and vegetables have cooled down. If not, they will “cook” your eggs before your eggs start baking.
You can make this richer by swapimg some of the milk with heavy cream, such as using 1/4 cup of milk and 1/4 cup of heavy cream.
Do not overbake this breakfast casserole; keep your eyes on it from the 40-minute mark.
