Description
Air fryer roasted maple butternut squash is sweet, savory, and tasty, and it makes a nutritious and mouth-watering side dish for any main! The best thing about this air-fried butternut squash recipe is that it is super easy to make, packed with fall flavors, and you can add it to other dishes! Roasted butternut squash is perfect with salads, bowls, and casseroles.
Ingredients
- 1/2 one whole (big) Butternut Squash aka, Autumn squash or about 3 cups cubed Butternut Squash
- 1–2 tablespoons of Maple syrup
- 1 tablespoon olive oil or avocado oil
- Salt to taste
- 1 teaspoon Dry thyme
- 1 teaspoon Onion powder
- A dash of Cinnamon, allspice or pumpkin spice (optional for fall flavors)
Instructions
- Cut and cube. The first step is to cut and cube your butternut squash. Put the cubes in a bowl.
- Season butternut squash cubes. Add all the ingredients (olive oil, onion powder, dry thyme, salt, and pepper) into the bowl except the maple syrup. Add the cinnamon, allspice or pumpkin spice (if using any of them). Combine well to season.
- Air fry cut/seasoned butternut squash. Set the air fryer time to 20 minutes and the temperature to 375F, then preheat the air fryer. The air fryer will make a beeping sound after the preheating. Place parchment paper on the air fryer basket and spread out the seasoned butternut squash—air fry.
- Turn halfway. You’ll want the cubes to come out tender, so you must turn them at the 10-minute mark. This is also when you will add maple syrup. Stir it well to coat every piece and finish cooking. Make sure all the butternut combines well with maple syrup for that sweet taste!
- Serve and enjoy. Serve hot/warm with your favorite main dishes or even as a topping on other dishes like bowls or salads! I combined this with baked quinoa and beets, and it was ah-mazing!!!
Notes
You can save time by buying pre-cut butternut squash.
Try to get the cubes uniform in size so they cook evenly.
If your butternut squash cubes are bigger, they may need more time to cook!
You may need to cook the butternut squash cubes in batches if you are cooking a lot!
Do not overcook the butternut squash cubes; they may dry up or become soggy!
This recipe may serve up to 4 people as a side dish!
