Here’s the easiest and tastiest cabbage carrot apple salad you and your family will enjoy! Everyone needs that quick go-to salad that is perfect at any time of the year and can go with anything! Today, I want to share my cabbage carrot apple slaw. The best part is that this easy cabbage slaw, aka cabbage salad, requires only a few ingredients and supper effortless to make!
Ingredients
- 1 head of small/medium size red/purple cabbage (or about 5 – 7 cups of sliced red cabbage); I used 3/4 of a big cabbage.
- 1 big fuji apple; peeled and chopped/cut (any “fresh” apple would work).
- 3–4 big/medium-sized carrots, peeled and shredded (or about 2 cups freshly shredded carrots)
For the dressing:
- ¼ – 1/3 cup of light mayo (I used 1/3 cup)
- 1/3 – ½ cup of light sour cream or plain Greek yogurt (I used ½ cup light sour cream)
- 1 – 2 tablespoons of honey (you can use monk fruit sweetener to keep this sugar-free and keto-friendly. I have used both; sweeten the dressing to your taste)
- 1 TBS olive oil (optional)
- 1 TBS Apple cider vinegar
- ½ of a whole lemon (juiced); about 2 TBS
- ½ – 1 teaspoon Salt (or as needed)
- ½ teaspoon Black Pepper (add as needed)
Instructions
- Prep the vegetables. Wash and slice the cabbage as desired and add it to a big bowl. Wash, peel, cut, and shred the apple and carrots, respectively.
- Prep the dressing. Add mayo, sour cream, olive oil, lemon juice, honey, salt, and pepper to a bowl, then mix well using a fork or whisk.
- Assemble the Slaw/Salad. Add/pour the dressing into the salad, and combine the vegetables with the dressing using a spatula. Then, serve/enjoy when you are ready with your main dish of choice. We have served this with chicken thigh, steak, salmon, and pork chops! You can never go wrong with what to serve with cabbage salad.
Notes
Use fresh, crisp cabbage. Ensure to pick up a great cabbage from your local grocery store. Stay away from soggy old vegetables. Do the same for apples and carrots. I rarely use red apples for this recipe; I typically stick with fuji apples.
After cutting your apple, sprinkle some lemon juice to prevent it from browning.
Keep this sugar-free by substituting honey with Monk fruit sweetener.
If you have an excessive head of cabbage, feel free to use about 3/4 of it instead of all.
Add more mayo and sour cream to make the dressing creamier.
Add more honey or monk fruit sweetener to sweeten this as you wish! If using monk fruit start with two teaspoons and increase to your desire. You can also combine honey and monk fruit!
Add cranberries to your cabbage carrot apple slaw for more texture and sweetness! I do like adding dry cranberries from time to time!
