The main ingredients in Nigerian fried rice include rice, onions, garlic, bell peppers, curry, turmeric, broth, and mixed vegetables. Wash and cut the veggies.

Homemade or store-bought broth works. You can use chicken or vegetable broth for Nigerian fried rice.

How to Make Nigerian Fried Rice: Step one

In a clean pot, add the broth or stock; a ratio of 1 cup of rice to 2 cups of broth.

Cook for about 20 – 25 minutes or until rice is more than halfway cooked (about 75% cooked) and all liquid absorbed (please see the video inside the post).

In a clean pan, fry and season the vegetables until they are translucent.

Slowly add rice and fry. Do not overcrowd the pan.

Cook until done. Ensure to taste, and adjust flavors if necessary.

Garnish with chopped parsley and mint leaves. Serve warm with baked chicken thighs.
