Take the stress out of your holiday cooking with this easy oven-baked stuffed turkey breast recipe. Boneless stuffed turkey breast is moist, juicy, tender, and incredibly delicious! This simple baked turkey breast is the perfect alternative to a full-size turkey for small families during the holidays. (And beyond)! Also, making turkey breast takes way less time than a whole turkey. Yet very flavorful and perfect for a small gathering! With its crispy skin tender inside, your whole family is going to love this well-seasoned turkey meat!


Ingredients

Scale
  • 1 (2½ – 3 pounds) of fresh turkey breast
  • ¼ EVOO (Olive oil) or Butter
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon of bouillon  

Ingredients for brining:

  • 6 cups of water (or more as needed)
  • ¼ cups of Salt
  • 1 teaspoon of dried rosemary
  • Few cloves (optional) 

Ingredients for the stuffing:

  • 1 cup of  half boiled chopped potatoes
  • 3 cups of fresh spinach
  • ½ cup of chopped bell peppers
  • ½ cup of chopped apples
  • ½ cup of chopped onions and garlic
  • 2 bacons
  • 1 egg white
  • 1/3 cup of parmesan cheese
  • 1 teaspoon crushed red pepper
  • ½ teaspoon black pepper
  • Salt to taste
  • ½1 Maggi

Instructions

How to Make my Gluten-free Stuffing for this Stuffed Turkey Breast

  1. Cut the fully cooked bacon into tiny bits, and set aside.
  2. Wash and cut/chop all the vegetables as needed
  3. Parboil the potato, cut/chop into tiny bits, and set aside
  4. In a clean pan, add olive oil, and allow to heat up. Sauté the onions, garlic, add a little salt, and scoop out and set aside.
  5. Then sauté the bell peppers also sprinkle a little salt, sauté for a few minutes, scoop out, and set aside.
  6. Sprinkle a little oil on the same pan (if need be), add the potatoes, season with a bit of salt and Maggi. Sauté and scoop out; set aside.
  7. Sauté the apples, and set aside as well. (Make sure to check out the video instruction)
  8. Sprinkle some oil if need be and finally sauté the spinach; add a little salt and Maggi. Place wilted spinach on a paper towel-lined plate. This way, the paper towel absorbs the liquid.
  9. Add all the sautéed stuffing to a clean bowl, starting with potato, bell peppers, apples, onions and garlic, bacon, spinach, and mix. Use a potato masher to break it down a little. Then add the cheese and egg white; mix.
  10. Finally, use a potato masher to mash together. Set aside to use when needed to stuff the turkey breast.

 

HOW TO MAKE STUFFED TURKEY BREAST (Pls watch the video)

  1. Preheat oven to 325
  2. Gently remove turkey breast from the brine. Use a paper towel to pat dry the meat.
  3. Butterfly the turkey breast (follow the earlier instructions on how to butterfly a turkey breast)
  4. Use the meat pounder tool to flatten the turkey breast. Then ensure the meat is spread out; sprinkle a little salt, black pepper, a dash of bouillon, and olive oil.
  5. Place all the stuffing in the side (not the middle) of the turkey breast. Lift that side and roll; ensure to cover the filling is rolled in and covered by the meat.
  6. Use the butcher’s twine to secure the meat by tying it across and knotting securely.
  7. Sprinkle small salt, pepper, bouillon powder, and olive oil on the tied-up meat.
  8. Place the turkey breast into a baking sheet, skin side up, and bake uncovered until the internal temperature registers 175 in the middle/thickest part.
  9. Allow this stuffed turkey breast to rest for 10 – 15 minutes before cutting and serving.
  10. Sprinkle some gravy or my green cashew spinach sauce.

Notes

Best to use a boneless turkey breast for this recipe.

Be sure to allow the meat to rest (for at least 10 minutes) before cutting.

Prepare the stuffing ahead of time (to save time.)

Make sure to have butcher’s twine to hold the meat together.

Bake uncovered and skin up.

The ingredients used for brine isn’t included in the nutrition calculation

This recipe is low-carb; you can make it keto by eliminating the apples and potato

I intentionally didn’t use sugar in my brine; you can add the same quantity as salt if you wish to use it.

Though I sauteed the stuffing ingredients individually, you can choose to sauté together. It will still work out!
