What are Fajitas?
Fajitas are tex-mex cuisine. In other words, a Texan-Mexican dish that refers to grilled strips of meat and bell peppers. Typically, to make fajitas, you will need to grill/cook thin strips or slices of meat with onions, bell peppers, and taco/fajita seasoning. And then served with corn tortillas. You may garnish them with guacamole, sour cream, salsa, pico de gallo, cheese, tomatoes, or chopped cilantro.
Currently, there are many ways to make fajita meat – on the stovetop, oven, grill, and my favorite way, which is air fryer fajitas! Relatively you can use beef for steak fajitas, chicken for chicken fajitas, or fish for fish fajitas. You can equally keep this recipe vegan by excluding meat or fish.

HOW TO MAKE CHICKEN FAJITAS IN AN AIR FRYER (STEP BY STEP):
Step one: Wash/clean and Cut the Veggies and Chicken Breast. First, wash the bell peppers as well as the chicken. Then slice the bell peppers and cut the chicken breast into thin strips; this helps for quick cooking. See the photos below.
Step two: Season the Fajitas. First, sprinkle the avocado oil or olive oil. Then sprinkle the seasoning and use a tong or a clean hand to combine. Ensure the seasoning touches every vegetable and chicken.
Step three: Air Fry Chicken Fajitas. First, set the air fryer to 16 minutes at 350 degrees and preheat. Then place the well-seasoned chicken breast and veggies in the air fryer basket and cook. Stir after 6 – 7 minutes. Cook for another 7 minutes, and it should ready.
Step four: Ensure chicken is fully cooked. Check if chicken is ready by cutting one chicken strip in the middle to ensure it’s no longer pink! Also, you can simply insert a food thermometer into the thickest chicken strip and make sure it reads 165.
Step five: Prep the Guac. Easily make the guacamole using this simple recipe. Alongside guacamole, we like to top fajitas with a dollop of sour cream. Usually, I combine equal quantities of sour cream and plain Greek yogurt with a dash of salt, pepper, and sweetener instead of plain sour cream. But do you.
Step six: Serving Fajitas. Typically, I serve this healthy air fryer chicken breast fajitas on tortillas. This is most people eat it. Also, you can enjoy them as is. My current obsession is to serve these air fryer chicken breast fajitas on fresh, crisp lettuce leaves! Finish with a drop of guacamole or sour cream (mixture) and avocado slices. I hope you make this recipe and enjoy it as you please!
RECIPE NOTES:
- It is perfectly ok if you don’t wash your chicken.
- You can freeze the chicken breast for 15 – 20 minutes, so it’s firmer and easier to cut into thin strips.
- Preheating the air fryer is optional; you necessary don’t have to preheat it. I don’t sometimes and yet my food always cooks well!🤷🏾♀️
- Give a stir midway to cooking; I don’t recommend shaking the air fryer basket because, with this recipe, the moisture/water will collect on the bottom of the air fryer. And shaking the air fryer basket will make the water pour right back on the fajitas. Typically, I would use a silicone spatula to stir gently.
- Make sure to check the chicken for doneness. Check if this is ready by cutting one chicken strip in the middle to ensure it’s no longer pink! Also, you can simply insert a food thermometer into the thickest chicken strip until it reads 165. These chicken breast fajitas are usually ready at 14 minutes. However, if yours isn’t ready by that time, cook for the entire 16 minutes set time or add an additional minute. Always remember that you can’t cook chicken rare; IT HAS TO BE WELL DONE.
- I like to warm up the tortillas in the air fryer as well. Ensure the air fryer is clean, and warm them up for 1 – 2 minutes at 350 degrees. Or until they are warm enough for you!
- I mainly use the whole wheat carb balance from “Mission.” It is only 5gram net carb and keto-friendly. We get them from our local Walmart.
FAQs
Usually, cooking time varies depending on the thickness of the chicken breast strips and temperature. However, this air fryer chicken breast fajitas are generally ready in 14 minutes (at 350 degrees). If yours isn’t ready by that time, cook for the entire 16 minutes set time. On the other hand, you can simply insert a food thermometer into the thickest chicken strip to see if it reads 165. Do not overcook these chicken breast fajitas, or they will dry out; you want them tender and juicy!
Yes, you can absolutely use taco seasonings for fajitas. To be honest, I don’t know the difference between a store-bought taco seasoning and a fajita seasoning. Use what you have on hand; there is no need to head out to the store just to get a fajita seasoning.
Cut the chicken breast into thin strips as this helps the fajitas to cook quickly and simultaneously with the vegetables. You can freeze the chicken breast for 15 – 20 minutes, so it’s firmer and easier to cut.
Variations/substitutions:
- Make this recipe vegan; easily exclude the chicken breast and use mushrooms instead.
- Use any meat of choice, such as steak or even boneless chicken thighs.
- Add fresh spicy peppers to ramp up the heat, such as cayenne/chili peppers, poblano, jalapeno, which are all great. I usually avoid them because my kids love this recipe.
- Kick the tortillas to the cub and serve air fryer chicken breast fajitas with a rice bowl instead. Did I hear you say yum? YES indeed!
- Swap guacamole for salsa or pico de gallo.
- You can use any color of bell peppers or onions; I used white onions because that’s what I have on hand.

Keep eyes on this while they air fry; it could cook quicker depending on how thin you cut them. Do not allow these to overcook.
Use any colors of pepper you have.

What kind of air fryer?
I use Instant Vortex Plus Air Fryer! I have used it for over a year and it works so perfect!
I just got an an air fryer and can’t wait to try this recipe. I noticed you put all the ingredients right into the basket, but would the results be the same if I used one of those silicone basket accessories? I’m trying to have easier cleanup.
Yay!!! Congratulations on your new air fryer, Susanns.
I feel you for wanting an easier cleanup. For this recipe, though, the water/moisture from the peppers, onions, and chicken needs to drain, at least drain, while it cooks. I have never tried it the way you suggest, but I think cooking it inside a silicon basket may not guarantee the same result. You can make it both ways – with a silicon basket and without.
I use to cook this on a sheet pan in oven but will give the air fryer a try.
Do you use any liner in basket? Parchment or silicone liner?
No, I didn’t use any liner. Sometimes, I pour the drippings right back on the steak.
It was okay, not great.
The taste was good, but the texture was not the same as if cooking it on the grill or griddle.
No plans to make this again.
