This is the easiest taco recipe you will have to make, perfect for lunch or busy weeknights. Though taco originated in Mexico, it is very much acceptable in most parts of the world.

Taco recipes are adaptable, versatile, and easily customizable. Which is why I love veggie wrap “tacos,” shrimp lettuce wrap, purple cabbage “taco,” and cheeseburger lettuce wraps are excellent non-traditional low-carb “tacos” to try!

What is Taco Tuesday?

First of all, what is a taco? Taco or tako is a traditional Mexican dish consisting of small corn or flour/wheat tortillas topped with assorted fillings. Typically, taco sizes range from small hand-sized tortillas, like 8-inch to 12-inch corn or flour tortillas. Usually, the larger tortillas are great for use as a taco wrap, which I wanted with this recipe!

On the other hand, Taco Tuesday (or Tuesday Taco) literally means eating a taco on a Tuesday! This tradition is usually celebrated in the United States. Also, it has a social media hashtag #tacotuesday #tuesdaytaco! Search the hashtag on Twitter, Instagram, or Facebook to see for yourself. So, today I am excited to share my easiest healthy taco that you can always make for taco Tuesday and beyond! The best part is that I used green spinach tortilla wrap instead of the flour tortilla. This wrap seem to be a little healthier, but, feel free to use any wrap you want.😊

Am New To Tacos & Wraps.

I have a confession to make; I am new to tacos! It is important to know that I am no taco expert, and it isn’t a traditional recipe from my culture! However, this recipe is an adaptation of the real thing and one of the ways I like to make quick healthy tacos.

First of all, I was born in Nigeria, and in my country of birth, nothing like taco existed. Probably there might be tacos in Nigeria right now, it’s 2021, baby. But when I was growing up in 9ja, there was rarely anything like tacos or wraps. To be fair, I never saw any.

Secondly, I never really liked cheese, and I have always felt that cheese is a mandatory component of taco (it’s not!) So I gave up trying even though living in America. Ok, a moment of truth, now I do eat cheeses. Say cheese (lol).😁

Thirdly, whenever I hear the word “taco,” I feel that it has to be fried, like the crunchy tacos. Well, as I started to educate myself, I realized that there are many ways to make and enjoy tacos (ding!). With this in mind, I took a special interest in the “green spinach taco wraps,” first, I was attracted by its colors, and then, I liked the texture!

INGREDIENTS FOR MAKING A HEALTHY TACO

Taco Shell, (I used a Garden spinach wrap): this is the star of the day, in other words without this wrap, this dish would not be happening. I love using a big round tortilla, because am generous when it comes to the filling. If your taco/tortilla is too small, it can only contain so much. And this wrap provides a healthy serving of carbohydrate as well.

Chicken breast: equally important in making this dish a classic is the addition of some protein. It is essential to add high-quality protein such as beef, chicken, turkey, etc., I personally love to make it with chicken. Chicken breast is perfect, but if you have leftover chicken meat from any other part, it works as well. In case you cook your chicken with the skin as I sometimes do, that’s ok, peel off the skin and use the meat.

Baby spinach or any other greens; I like to mix them up. You are free to use only one of them. I love the texture of them both in the mouth. This ensures you get a good serving of vegetable while treating yourself to a tasty taco. I personally enjoy the addition of good amount of spinach in the healthy taco recipe!

Guacamole or mashed avocado is necessary for this healthy taco because it provides a healthy serving of fat! Additionally, I like a spicy guac when it to this recipe. Easily make your guacamole spicy by adding crushed red peppers when mashing it! Be sure to add a dash of lime juice and salt to taste as well! Alongside this, you will also need a tablespoon each of fresh green onions and dry cranberry.

HOW TO MAKE THIS HEALTHY TACO RECIPE

  1. Cut chicken into slices and set aside. (I assume your chicken is already fully cooked)
    Mash ¼ of a ripe avocado with salt, pepper, and a dash of lime juice (to prevent it from browning. Taste for flavors, adjust, and set aside.
  2. Warm up the taco shell/wrap according to package instructions from the manufacturer. (I usually warm it up on the stove to my preference. You can warm up in the microwave)
  3. To fill up this healthy taco wrap, lay the garden wrap (or any other taco wrap) on a flat surface or cutting board. Spread the guacamole; use a spoon and evenly spread the entire guac on the taco, leaving out only about ½ inch from the edge of the wrap.
  4. Add the spinach, use them to cover the avocado spread.
  5. Then layer the chicken side by side and in the middle.
  6. Top with dry cranberries and green onions. Finally, wrap this up.
  7. To wrap this healthy taco wrap, first, fold in the sides. Second, use the flap to roll over until the entire taco is secured. Alternatively, you can roll it by folding gently from one side to the other.
  8. When you are ready to eat, cut it in the middle to see your creation and enjoy!

Tips for Making the Best Taco Wraps Every Time:

  • Use the best tortilla you can find. There are plenty out there in the grocery stores. In reality, a great taco/taco wrap begins with a good tortilla or wrap. I opted for this Graden Spinach wrap because I wanted to make a healthy taco wrap. There are equally low-carb tortillas if you so prefer. I saw these raw gluten-free, paleo, keto-friendly wraps on Amazon! Definitely worth checking out.
  • Add a spread; for this recipe, I used guacamole, aka mashed avocado. However, if you don’t like avocados like my baby girl, then use another spread. It spread helps everything to come together and also acts as a binder. A mixture of mayo and sour cream could work.
  • Use the ingredients you like; make sure to use the fillings you already like and enjoy. For instance, salmon, beef, or goat meat would all work in this healthy taco recipe as protein if you prefer. On the other hand, plant-based protein would be excellent! Do you!
  • Finally, don’t worry about rolling up a perfect taco wrap. You can decide to eat it without necessarily rolling it! At the end of the day, no one cares as long as you are having fun.

Notes

I love the sweetness of the cranberry and how it brings everything together. Exclude it if you don’t like it.

This recipe serves only one person, double it to make more recipes!

Preparing this healthy taco wrap takes less than 10 minutes if the chicken is already ready.
